Kefir sourdough bread
Ingredients
Sourdough (three hundred and fifty grams): kefir, flour. Dough: four hundred grams of flour, two hundred grams of water, ten grams of salt, sugar to taste, vegetable oil.
Kefir must be left in a warm room for some time to sour, then add flour to the consistency of sour cream and leave for a day. After time, add a little flour again, the consistency should be somewhat thicker, and set aside again for one day. Now the starter is ready.
All other ingredients are added to the starter and the dough is kneaded. Baked in a bread machine.
Bread with mineral water
Ingredients: four tablespoons of bran, two glasses mineral water, four tablespoons of vegetable oil, one and a half glasses, one and a half glasses of wheat flour, half a spoon of caraway seeds.
Mineral water is mixed with oil, bran, caraway seeds and flour ( coarse grind) and add wheat flour, knead the dough, form bread from it, place it on a baking sheet, previously moistened with water, and bake for fifteen minutes, after which the heat is reduced and bake for another twenty minutes. The finished product is wrapped in a towel and left for one hour.
Yeast-free bread(baked in a bread machine) based on hops
Ingredients
Sourdough: one glass, two glasses of water, half a glass of flour, one tablespoon of sugar or honey. Dough: two hundred grams of milk, two spoons of sugar, ten spoons of sourdough, flour, salt.
The hops are poured with water and boiled for one hour, then left for eight hours. After this, filter, add flour and sugar, mix, cover with gauze and leave for one day in a warm place.
Prepare the dough. To do this, add sugar, sourdough and enough flour to the milk to make batter. Mix everything and leave for two hours, after which salt and flour are added and kneaded if using a bread machine. Homemade yeast-free bread is much tastier and more aromatic than store-bought bread. Next, you just need to turn on the “baking” mode. If an oven is used, the product is baked at high temperature for forty-five minutes.

Preparation:

- Add the remaining ingredients in this order: warm milk, egg, sugar and salt, flour with baking powder. Warm milk activates gluten faster, so you should definitely heat the product.
- On the panel of your kitchen “assistant”, set the mode: “Quick baking”, decide on the shade of the crust and press the “Start” button.
- Wait for the bread to be cooked in the bread maker while you do your business in another room. The bread machine beeps to notify you that the process is complete.

Sourdough bread recipe
This time we will prepare a leaven from raisins, which will act as a leavening agent for the dough.
Take: 0.150 liters of water; a handful of raisins; 0.3 kg rye flour; 30 g honey; 70 ml vegetable oil; 0.750 kg wheat flour; 2 tbsp. spoons of sugar; 1.5 tbsp. spoons of salt; 0.5 teaspoon of soda.
Cooking steps:
- Rye bread in a bread machine is baked with sourdough, which will take 5 days to prepare.
- Rinse the raisins and grind in a blender. 2 Fill it with filtered water, add honey and half the rye flour.
- Shake the mixture, cover the jar with a damp cloth and place in a warm place to ferment.
- Every other day, add 3 tablespoons of rye flour and 50 ml warm water– the yeast needs to be “fed”.
- Do the same 3 more times every day. The mixture should resemble pancake batter.
- Now you can start making bread in a bread maker. Place a glass of white flour into the bowl of a Panasonic bread machine, then 7 tablespoons of sourdough.
- Add the rest of the flour, sugar, vegetable oil, soda and salt.
- Set the bread machine to a mode that includes kneading, rising dough and baking rye baked goods, and go to rest.
As soon as the equipment notifies you that baking without yeast is ready, remove it from the mold and cool.

A simple recipe for rye yeast-free bread with kefir in a bread machine
List of ingredients: 0.6 kg rye flour; 0.3 l kefir; 0.5 teaspoon of soda; 50 g bran; 80 ml vegetable oil; a tablespoon of flax and sesame seeds; 15 g each of granulated sugar and salt.
Preparation steps:
- Place sesame, bran and flax seeds in a dry frying pan and lightly fry.

I baked yeast-free bread in a bread machine using the one I had prepared for five days. I used it for baking, my faithful assistant. I read a lot on the forums about how to make bread without yeast at home - everyone writes differently everywhere, surprisingly. I was interested in the question of how much leaven to put in yeast-free bread. That is, if I don’t put in yeast, then there should be enough so that she can raise the dough. In general, I did this - it took me two tablespoons for bread in a bread machine without yeast rye sourdough. I took it by eye, trusting my own instincts more than recipes on websites.

Ingredients for bread without yeast:
- actually live sourdough(rye) - 2 tablespoons
- Wheat flour - 225 grams, peeled rye flour - 200 grams
- Wheat bran - 3 tablespoons

Place the starter in the bottom of the bread pan, then the flour, the rest of the ingredients and finally pour in the water.

This is an independent process, it depends on many factors, I left the dough in the bread pan directly in the bread maker and went to work. After 10 hours, this is how it rose - by about half the volume.

The taste of the bread is unusual, slightly sour, and the bread itself is quite dense in texture. Very tasty! The loaf came out quite small, but it lasted us a long time.
They say that a bread machine is good, but you can’t eat a lot of fresh yeast bread. I don’t know to what extent these words correspond to the truth, and what doctors think about this, but I have no desire to risk myself and the health of my beloved loved ones once again.
To diversify my bread diet, I decided to try making a yeast-free “brick”, to which I added sesame seeds to improve the taste.
The baked goods from this portion were very small, but very tasty. Now I’m not afraid of an extra piece of bread or a spoiled figure, because, as the owners of bread machines have already advised me, I’ve already started pumping my abs and, I hope, my figure will remain in the same volumes.
Search good recipe I started with the instructions for yeast-free bread, but there was none there. Then I looked through the book, which contains recipes from different peoples.
Believe it or not, it turned out that in this book there is an entire chapter dedicated to baking bread in a bread machine. I skipped this chapter before, because I wasn’t going to buy a bread machine. Now I read the recipes from first to last with pleasure and great curiosity.

To prepare yeast-free bread in a bread machine, you need the following products:
1 tsp baking soda
1 tsp salt
0.5 tsp Sahara
1 tbsp. sesame
Therefore, the baking soda dough needs to be baked at an accelerated setting. My bread machine has 3 speed baking modes: "Quick Bake", "Ultra Quick Bake 1 for 750g bread" and "Ultra Quick Bake 2 for 900g bread".
For this type of bread I used the "Ultra-Fast Bake 750". With its help, bread is baked in 58 minutes, of which only 10 minutes are spent kneading the dough.
To prepare the dough, pour kefir into the mold.
Add baking soda
salt
and sugar.
Pour flour into a bucket.
Add sesame seeds if desired.
We send the form to the bread machine, set the program for ultra-fast baking of bread weighing 750g. After kneading the dough, sprinkle it with flour to create a tasty crust on top.
Check the readiness of the bread with a wooden skewer. My bread was not completely baked, so I baked it for another 15 minutes in the “Baking” program (depending on the kefir liquid and flour).

All you need to do is pour the required amount of ingredients into the cup in a given sequence, press a couple of buttons and wait for fresh and fragrant bread! I assure you that there is not the slightest reason to fear that due to the absence of yeast in the dough, the bread will turn out dense and more like a warm “brick”. Quite the opposite - this yeast-free bread made with kefir will pleasantly surprise you with its crispy crust and delicate, airy crumb.
Ingredients:
- kefir – 320 ml,
- soda – 0.5 tsp,
- sugar – 2 tsp,
- salt – 0.5 tsp,
- olive oil (or any vegetable oil) – 2 tsp.
- "Italian herbs" ( ready mix spices and seasonings) - a pinch to taste,
- wheat flour - 400 g (plus another handful or two if necessary).
How to make yeast-free bread in a bread machine:
Take a bread maker container and insert a stirrer. Next we measure necessary ingredients and put them in this order. First kefir.
Then soda.
Sugar, salt.
Italian herbs, olive oil.
And only then the flour.
Keep in mind that the consistency of the dough directly depends on the fat content and thickness of the kefir (mine was thick), so during the kneading process, monitor the operation of the bread maker and, if necessary, add more flour. Be sure to sift the flour before placing it in the container. It's that simple.
Now we put the container in the bread maker and set the appropriate baking program (depending on your bread maker model). The program can be anything like for yeast bread, or you can experiment with the task on quick baking. We indicate the weight of the future loaf and the degree of browning of the crust. I prefer the bread crust light or medium, weight – 750 g.
When the process of kneading the dough comes to an end and baking of bread begins (this will be clearly visible on the display of your oven, usually 50 minutes before the end of the program), carefully make small cuts on the top of the loaf. These cuts are not a necessary procedure at all, they are made only to make the loaf more appetizing appearance. Therefore, if you don’t have much time to look after your bread maker, don’t do it, bread won’t become any less tasty without them. ;)
As soon as the bread machine beeps, the bread is ready! Let it cool a little in the container, then remove it.
You can serve the bread immediately, or you can cut it into slices and freeze it for future use. It’s very convenient to then take out a piece and heat it in a toaster or microwave.
