Preparing herring salad (45 min):
1. Prepare ingredients.
Choosing herring is an art. Try not to take herring that is sold on the street from a “bucket”. It is better to take the herring from the same proven place. The herring should be undamaged, glossy and without dents. The back of a good herring is blue-black and dark. The belly and sides are silver. Under no circumstances should reddish liquid ooze from the herring. And, of course, the smell should be spicy, “herring”, and not smell like fresh fish. Once your herring has been weighed, feel free to pinch off a piece of it just behind the head on the back and taste it. Or tear out the side fin. However, with time you will get the hang of it.
I clean the herring by placing it on regular newspaper, so the paper absorbs moisture. With a sharp knife, I make a shallow longitudinal cut from head to tail - half the withers. Then I use my fingers to remove all the skin, starting from the head. I then cut off and discard the head and tip of the tail. With the same knife I cut off the belly - no more than 5 mm from the very bottom. I gut the insides, using a knife to remove the dark film lining the internal cavity. If there is a lot of liquid and “extra” inside, you can wipe it off with a regular napkin. Then with my left hand I grab the protruding spine where the head was, and with the fingers of my right hand I tear off the fillet from the spine. All that remains is to select all the bones. You will get two herring fillets - without bones. The whole procedure takes about 5 minutes.
2. Cut the herring across the fillet into pieces 6-8 mm wide.
3. Peel the carrots and cut into small cubes. Fry carrots in 1 tbsp. olive oil until soft. Set the carrots aside.
4. Green onions - only the feather, finely chopped. However, you can cut the white part into a salad, but the green part is more aesthetically pleasing, so it’s up to your discretion. Also chop the parsley.
5. Bake potatoes. Or boil it in its jacket. Cool and peel. Cut each potato in half lengthwise and cut into thin slices - large enough, approximately the same as a herring.
6. Peel the apple and cut into thin slices. Drizzle 1 tsp over apple slices. lemon juice and stir. This will prevent the apple from becoming oxidized due to oxidation.
7. In a large bowl, mix potatoes, herring, carrots, capers. Add salt and mix.
8. Add chopped apples, parsley and green onions. Season with ground black pepper.
9. Grind the garlic cloves in a mortar and add the curry mixture on the tip of a knife. Pour olive oil into a mortar and grind until smooth. Pour the dressing over the salad and stir.
Next there are two options. The first is to start snacking immediately. But I recommend putting the salad in the refrigerator for a couple of hours so that the salad can brew and soak in the dressing. And then - you can start. You'll like it.

Take one medium carcass of lightly salted Norwegian herring. Peel it and remove seeds, as in the video above, and chop the pulp finely.
Now prepare the onions. Chop a large onion into thin half rings, as in the photo.
Over low heat, sauté the onion in vegetable oil until translucent and light golden brown. Don't fry it too much, otherwise it will taste bitter. If you don't like the taste of fried onions, add them fresh. A even better - pre-marinate in apple cider vinegar with a pinch of sugar.
Prepare a wide, flat serving plate to serve on. Place a metal serving ring in the center.
If there is no such ring, you can do it differently. In this case, lay out all layers of salad in the reverse order. Take a round bowl with straight sides and line it with cling film. Form the salad into layers in a bowl, and then turn this container upside down onto a flat plate. After you remove the bowl with the film, the neatly arranged snack will remain on the plate. Just don't forget to decorate it on top.
