Honey, cinnamon, spicy ginger and a barely perceptible, like a vague memory, aroma of cloves - these honey cookies crunch especially well when they cool down. So, keep hot cookies away from greedy children’s hands, otherwise you risk running out of whole cookies. Curious little ones flock to the aroma of spices and try to take a bite of each cookie. The interest is understandable: what if the next one tastes different from all the previous bites? By the way, you can play with the taste of cookies using different proportions of spices. Or you can do without them altogether if you have particularly fragrant honey. For example, buckwheat. I have regular flower honey. There are large stocks left from last year's fair. Just before closing, one very cheerful Bashkir grandfather sold me a bottle of fragrant honey, with broad gestures depicting how a swarm of bees flies out in full force into a flowering meadow to collect this particular type of honey. And he even wrote the name on a piece of paper. Unfortunately, the piece of paper was not preserved, the name was forgotten, and there was just enough honey left for a batch of honey cookies. The recipe is not hackneyed and, importantly, not gingerbread. We like to slip gingerbread cookies under the guise of cookies, but they are so smooth and strong that not only of them gingerbread houses can be folded, but houses suitable for living can also be built. Our honey cookies have a crispy crust and a caramel-soaked center. This effect occurs due to the fact that the honey in the cookies is not a spoon or two, but more than a quarter glass.
Mix all ingredients thoroughly in a kitchen machine. Gradually add flour and knead until dough comes away from edge. Then let the cookies cool on a wire rack. They harden and do not break easily. These people can also enjoy the excellent surface texture of the cookies.
Mix the walnut pieces in a bowl with some cinnamon and clove powder and mix well. Now prepare a “copper bath”: honey, sugar, water and lemon juice, as well as some cinnamon and clove powder are heated in a small pot. The cookies are gradually washed in a boiling honey solution and then left to cool on baking paper. The remaining honey solution is allowed to cool until it becomes somewhat viscous. The walnut pieces are now very well attached. Finely chop the Makhlepi spice, boil in 50 ml of water and pour into the tea filter.
Ingredients:
- 125 g honey (4.5 tablespoons),
- 250 g sugar (1.5 cups),
- 110 g butter,
- 350 g flour (2 cups and 1 tablespoon),
- 2 eggs (we only need whites!)
- 0.5 teaspoon salt,
- 1.5 teaspoons baking powder,
- 1 small heaping teaspoon of ground ginger,
- 1 level teaspoon of cinnamon,
- 0.5 teaspoon ground cloves
You will also need sugar for rolling the cookies.
Leave it to stand for 30 minutes in a warm place until the bubbles set. Then - soft margarine, eggs, Makhlepi solution and gradually flour. When half the flour is mixed, add salt. Adjust the amount of flour to create a nice smooth dough that is virtually non-stick. Place the dough in a warm place for about 30 minutes. Then with smeared hands on a wooden board or similar. How bread dough. The dough should have a smooth surface without cracks.
Place round shape baking tray with baking paper and place the spherical dough in the middle. Then smooth with your palm, creating a flat surface. Round shape with hand. Leave the pan to rest in a warm place until the dough has doubled in volume. Now spread the surface of the dough with egg yolk and sprinkle with sesame seeds. Once cooled from the bottom into the lucky coin cake. The cake is cut into New Year's Eve in the presence of all family members. There is a solid procedure for distributing the pieces. The first is for Christ, the second for Mary, the third for St. Bassilios, the fourth for the house, the fifth for the father and the sixth for the mother.
Method for making honey cookies
Why I love cookies is their ease of preparation. If all the products are at hand, the process takes about five minutes at most.
Any shortbread dough(and we will make cookies from it) start by taking the butter out of the refrigerator. It needs to come to room temperature to become soft.
Anyone who finds a lucky coin in their game has the best luck in the new year. The rice is covered with 300 ml of water and a pinch of salt. Mix at moderate to low temperature. After about 10 minutes the rice had practically swelled the water. Add 1 liter of milk and boil with stirring for another 20 minutes. Meanwhile, a mixture of 125 ml milk, 1 vanilla sugar, 50 g sugar and 1 lb. When the rice is softly cooked and puffed, add the above mixture and simmer for another 5 minutes. Let cool slightly and place the milk rice into flat bowls.
After final cooling, the cinnamon powder is spread over it, depending on the taste. Shelf life: 2 days. Heat: Heat the milk and dissolve the yeast. Heat the margarine slightly until it melts. Add flour, 3 eggs, sugar and spices. Margarine and pre-dough and knead until a homogeneous dough is formed. Divide the dough into 3 equal parts and prepare as follows: Form the dough into a long sausage and then form a small braid. Press the colored egg into the round.
Grind butter with sugar. You can beat with a mixer if you want, but this is not necessary.
Add honey and mix.
We separate the whites from the yolks. We no longer need the yolks, but add the whites to our mixture. It turns out to be a fairly liquid mass. You'll see what it looks like below.
Cover with a towel and place in a warm place until the volume doubles. Yolk egg yolk with a little milk and distribute evenly among the 3 cakes. Garnish with almond halves and almond slices. These two delicious desserts, consisting of thin puff pastry or thin strands of dough, nuts and honey, are widely used in the Middle East. In Greece, nuts are a must.
Baklava needs thin round wood as a sliding aid. Walnut kernels coarsely grind the almonds in a pan without fat and roughly roast them. Mix thoroughly walnuts, sugar, almonds, breadcrumbs, cinnamon powder and clove powder. Butter and margarine. Stir in syrup, boil briefly, leave to cool.
Cooking spices. I have everything already ground, except for the cloves. So I grind it in a mortar and then sift it through a strainer so that large particles don't get into the dough.
To make the dough homogeneous, we mix flour with spices and baking powder in a separate container.
Roughly grate the pistachio nuts and store separately. Roll the fillet for baklava. Now roll the round wood to the end, press the roll from the ends and press the roll with your fingers in a circle. Remove the round wood and gently press the nut back in with your fingers. Divide the nut into 4 equal parts and place in a casserole dish. Place in a casserole dish. Alternative: Shape the cookies into a circle into a small nest and fill with a nut.
Roll up the baklava fillet and spread the first section with the melted fat. Divide the nut into 4 equal parts and place in a dish with a saucepan. Coat the filled pan with the remaining grease and sprinkle with a little water. Remove from oven and discard cold syrup. If necessary, sprinkle with chopped pistachios.
Pour the liquid mixture into the flour mixture.

The dough turns out to be quite soft and to make it more convenient to make cookies from it, put the pan with the dough in the refrigerator for half an hour. (You can make the dough in advance - it keeps well for two days.)
Let cool and serve with Greek coffee. Wilhelm Feiler's development of the recipe is somewhat older and dates back to the traditional gingerbread style in Coburg. A special type of culinary delicacy is coburg. In the Coburg dialect, "Schmatzle" actually means as much as "kisses". So if you give away delicious, tangy honey cookies, it will go especially well with the recipient or recipient of that gift. Spices, almonds, lemon and orange pepper were also brought to Oberfranken through the trading metropolis of Nuremberg. This brought further successful apprenticeships and journeyman years back to Coburg master baker Wilhelm Feiler's idea led to the development of a specialty refined with almonds, honey, spices and citrus flavours.
Bake for 15 minutes in an oven preheated to 180 degrees. During this time, the cookies will have time to darken, and the balls will blur into neat circles. In my opinion, they look very similar to the factory ones. Which I personally really like. :)

This soon became famous over the Coburg borders delicacy. Wilhelm Feiler finally took part in world exhibitions in Paris, Brussels and Berlin, where his specialties were awarded gold medals and honorary awards. Production begins with the production of the so-called liquid honey storage and wheat flour. It remains dark, cool and dry in the cellar for several months, going through a ripening process that improves the flavor and driving force of the later dough.

Simple and delicious honey cookies, which are prepared on a quick fix. Shortbread dough. If you roll it thin, it will be crispy, if it is medium, it will be softer and more tangible. Total cooking time is about 20-30 minutes. Everything is fast and easy. The cookies are very tasty and aromatic.
Compound
for 2 cookie sheets
- Flour – 3.5 cups;
- Eggs – 2 pieces;
- Instant coffee – 3-4 teaspoons;
- Water for coffee – 100 ml;
- Salt - a pinch;
- Sugar – 100 g (2/5 cup);
- Honey – 4 tablespoons;
- Vegetable oil – 1/2 cup;
- Butter – 25-30 g (piece) – optional, optional;
- Vanilla sugar, cinnamon, ground cloves, ground ginger - 1 teaspoon each (all spices are optional, I did not add).
2 sheets of baking paper.
To cook the pieces, the dough is heated. It is then processed into a hard dough with roasted hazelnuts, almonds, lemon, orange, honey and the finest spices in a kneading machine. It is formed into small 3cm cookie cookies and is golden brown. Once cooled, the smugglers are packaged in historic bags and tins, which have been decorated by Coburg artists with city motifs.

Wilhelm Feiler's development of the recipe is somewhat older and dates back to the traditional gingerbread style of the Coburg region. You can enjoy the specialty all year long. Coburg dishes are eaten all year round. They are flavored with tea and coffee, as well as a good glass of red wine or punch.
How to cook
1. Make shortbread honey dough
All liquid ingredients, except eggs and butter, are mixed with hot coffee and cooled (so that the dough does not become custard). The coffee is needed for the nice yellow-brown color of the honey cookies. Then the liquid is combined with the rest:
- Prepare coffee in a large cup - pour instant coffee hot water(100 ml). Stir. Add all the sugar and salt to it. Stir until the crystals are almost completely dissolved.
- When the coffee with sugar and salt has cooled a little, add honey to it and stir again. Top it up there vegetable oil. Cool to lukewarm or room temperature.
- Combine flour with eggs and prepared coffee-butter syrup. Add spices, if you want to use them, and a piece of butter. Knead the dough. If it is not smooth enough, add 1-2 tablespoons of vegetable oil.
2. Make cookies
- Roll out half of the dough on a sheet of baking paper (thickness - about 0.5 cm). Use cookie cutters to cut out cookies and remove any scraps. Transfer the sheet of paper with cookies to a baking sheet. There is no need to lubricate the rolling pin and paper with anything, the dough is already oily and does not stick. Then roll out the second half of the dough in the same way on a second sheet of parchment. Before baking, prick the cookies with a fork.
- Preheat the oven to 200-220 degrees C and bake honey cookies. Navigate by smell. There was a thick honey smell - see what was going on there. If the top of the cookie is set, it's ready.
- Cool the finished cookies under a towel. Transfer to bags and tie tightly for storage (so as not to go stale). You can also store it in tightly closed tins.
