How to prepare pumpkin with meat in a “pot”
- Wash the pumpkin, cut off the top (it will be the lid in the pumpkin pot), and remove the seeds.
- Finely chop the meat, quickly fry with 1 tablespoon of oil for hot frying pan(3-5 minutes), until slightly browned, add spices.
- Wash the eggplants, finely chop them into cubes, cut the onion into half rings, fry with 1 spoon of vegetable oil in a well-heated frying pan for 5-10 minutes, add spices, adjika, and garlic.
- Combine meat with vegetable mixture, mix, salt, fill the pumpkin “pots”, cover with “lids” (if they do not fit tightly, you can secure them with toothpicks).
- We preheat the oven to 200 degrees, the pumpkin with meat is sent for baking (for about 1 hour 15 minutes). You can use the pumpkin as a guide - the crust should turn dark brown.

This simple recipe, one of my favorites, is a variation of numerous pumpkin dishes with meat. Pumpkin with minced meat is an extremely simple way to quickly and tasty feed your family a healthy, satisfying dish.

What is pumpkin with minced meat made from:
- pumpkin (peeled, pulp) – 600 g;
- minced meat (chicken) – 500 g;
- potatoes – 3 pcs.;
- beans (fresh or canned) fresh (pre-boiled until full readiness– 200 g, if canned, then – 350 g (without liquid);
- onions - to taste;
- seasonings (white or black pepper, curry) - to taste;
- salt;
- sunflower oil (a couple of tablespoons, for frying).
How to prepare pumpkin with minced meat: cooking method
- Peel the pumpkin and potatoes and cut them into large cubes.
- Chop the onion into small pieces, fry until golden brown in a large thick-walled frying pan, then combine with potatoes, mix, fry for 3-5 minutes.
- Add the minced meat to the onions and potatoes, fry everything together over medium heat for about 10 minutes.
- Add curry, stir, after 2-3 minutes add pumpkin, pour hot water(to slightly cover the contents), add salt and pepper, simmer for 20 minutes, stirring, over low heat.
- When the pumpkin with minced meat is almost ready, add canned beans, simmer the dish for another 5 minutes, sprinkle with herbs.
The recipe recommends beans, with them you will get hearty dish with a peculiar, unique taste, but even if you don’t have beans at the moment, don’t give up cooking, pumpkin with minced meat will still turn out successful even without it.
How to cook:
Cut the meat into pieces, put it in a saucepan, season with salt and all the spices according to the recipe. Leave to marinate for half an hour.
Peel the vegetables, cut into cubes, finely chop the garlic and onion. Fry the meat over medium heat in a frying pan or in a saucepan for 10 minutes, put it in a separate bowl.
Place the onion and garlic in a frying pan (saucepan), simmer for no more than five minutes, and combine with the meat. We put all this in a saucepan, add tomatoes (if canned, then with juice), pour a glass of boiling water, simmer over low heat for 15 minutes.
Combine pumpkin and potatoes with the meat, add salt if necessary, cook the stew until ready
