Fried crispy strips of dough, sprinkled with powdered sugar– brushwood cookies, familiar to many, come from childhood. The fashion for it subsided a little when inexpensive varieties of all kinds of sweets began to appear in abundance on store shelves.
However, now, in the age of health consciousness, when much attention is paid to what we eat, homemade baking returns to our tables again.
This dish came to us from Greece and became popular everywhere towards the end of the 19th century. It is precisely because this delicacy is so thin and crunchy that it has earned its name - “brushwood”.

The brushwood according to the classic recipe turns out thin, crispy and amazingly tasty, while it is incredibly easy to prepare. Don’t be alarmed when you see vodka among the ingredients; alcohols completely evaporate at high temperatures, so even small children can consume cookies.
Alcohol will affect the structure of flour proteins, which is why, when frying, the surface of the “twigs” will bubble, and they themselves will become crispy rather than rubbery.
Required ingredients:
- 2 eggs;
- ½ tsp. table salt;
- 0.23 kg flour;
- 1 tbsp. vodka;
- oil for frying.
Preparation procedure:
- For the dough, gradually mix all our ingredients. Beat the eggs with salt, then add vodka to them, gradually add flour. As a result, we get an elastic dough that slightly sticks to the palms.
- Wrap it in plastic and refrigerate for 40 minutes.
- For ease of rolling, we divide the dough into several parts, leave one of them, and return the rest to the bag. Otherwise it will dry out very quickly.
- Roll out the layer as thin as possible. The airiness of the future dish depends on how subtly you manage to complete this task.
- We cut the layer into strips, in the center of which we make a cut, and through it we turn out one of the edges of the workpiece. If you don’t want to mess around, then you can leave everything as is, the taste of the cookies will not change.
- After the pieces are cut, put the frying pan with oil on the fire. The twigs fry very quickly, so there is a risk that you simply won’t have time to put in and take out ready-made ones. We pour in such an amount of oil that our products drown in it. When the pieces fall into the boiling oil, they will begin to swell right before your eyes and take on all sorts of bizarre shapes.
- The finished brushwood should be placed on a paper napkin, towel or baking parchment, which will absorb excess fat.
- The dish is served generously sprinkled with powdered sugar.
Fluffy and soft on kefir - an ideal treat
The favorite cookie of Soviet children does not have to be exactly crispy; if you knead its dough with 300 ml of kefir and 3 cups of flour, we will get a whole mountain of fluffy and magical delicious baked goods. You will also need:
- 1 egg;
- ¼ tsp salt;
- vanilla packaging;
- 3 tbsp. Sahara;
- 3 tbsp. refined oil;
- 1.5 tsp. soda
Cooking steps:
- We begin to beat the egg with salt and sugar.
- Don't pour it into a cup cold kefir, add soda so that it begins to react.
- Pour kefir into the egg, add oil, stir again.

- Divide the dough into parts, roll out and cut into strips, cut each one with a cut in the center, and turn one of the edges through it.
- Fry in a large amount of oil, once ready, place on a napkin to remove excess fat.
- Sprinkle the still hot twigs with powder and hurry to put the kettle on the fire.
How to prepare the most delicious, thin and crispy brushwood with vodka?
Want the crispiest firewood? Then only 1 tbsp should be added to the dough. vodka. It will not give any taste or smell, but your favorite children's sweet will unforgettably crunch and melt in your mouth. In addition to alcohol, a glass of flour and powder for dusting, you will need:
- 2 eggs;
- 200-300 ml refined sunflower oil.
Preparation procedure:
- Beat in the eggs and beat them with a fork along with the salt. There will be no sugar in this recipe; for deep-fried dishes this is only a plus.
- Add strong alcohol, mix again.
- Add flour in parts. The resulting dough should be quite elastic.
- We divide what we received egg dough into pieces, we try to roll each of them into the thinnest layer possible, try to achieve a thickness of 1.5 mm. To prevent the area from sticking to the work surface, sprinkle it with flour.
- We cut the rolled out dough into rectangles, the long side of which should not be more than 10 cm, otherwise it will be inconvenient to fry.
- Pour a glass of oil into the frying container, wait until it boils, and then put the brushwood blanks into it.
- You can remove it from the oil in 25-35 seconds.
- Let the excess fat drain onto paper towels, then sprinkle them with powder without skimping.
Recipe with milk
Milk brushwood will require only 2 tbsp. cow's milk for 2 cups of flour, in addition prepare:
- 2 eggs;
- 80 g sugar;
- dusting powder.
Preparation procedure:
- Beat eggs with sugar until the latter dissolves. Add the rest of the ingredients, add the flour last, in parts, and beat.
- The resulting dough should be soft, but slightly sticky, otherwise it will not be possible to roll it out thinly.
- Cut a small piece from the total layer of dough and roll it into a thin cake with a maximum thickness of a few millimeters.
- We cut it into small rectangles of arbitrary size, make a through cut in the center of each, and thread one of the edges through it.
- Heat the oil in a deep frying container and dip the pieces into it.
- We take out the finished brushwood with a slotted spoon and transfer it to a colander or paper napkin.
How to make brushwood with sour cream at home?
To prepare sour cream brushwood, do not forget to buy 200 ml of sour cream in the store; based on it, you will have to make a dough that will take about 3 cups of flour. Also prepare:
- 2 eggs;
- 100 g sugar;
- 1.5 tsp. soda;
- refined oil for frying;
Cooking steps:
- Beat eggs with sugar, add sour cream and soda, mix thoroughly.
- We introduce flour in parts; its quantity may not coincide with that specified in the recipe, because in many respects everything depends on the quality and moisture content of the product.
- The finished dough, for all its softness and airiness, should not stick to your palms.
- Roll out a thin layer of 3-4 mm, cut it into arbitrary rectangles or rhombuses. In each we make a through cut in the center and thread one of the edges into it.
- Heat the oil in a deep-bottomed frying pan.
- Fry the brushwood on both sides and remove with a slotted spoon. Don't move too far from the pan; the cookies will fry in no time.
- Let the excess oil escape by placing the baked goods on a paper towel. After this, without skimping, sprinkle everything with powdered sugar.
On mineral water
You may already be familiar with this version of brushwood, but only by its second name - honey baklava. It is quick and easy to prepare, and the crispy result will captivate your household. To knead the dough you will need the standard three cups of flour and 200 ml of mineral water, as well as:
- 10 g sugar;
- 60 ml of vodka or other strong alcohol;
- 1 tbsp. sour cream.
Cooking steps:
- In the center of the flour slide we make a depression, pour sour cream, alcohol, mineral water, sugar and salt into it. Mix everything with a spoon.
- Knead until elastic, after sprinkling the table with flour.
- Cover the dough with plastic or a towel, let it sit for a while, then knead again.
- For ease of rolling, we divide it into several parts. We roll out each of them as thinly as possible, it is desirable that the thickness of the layer be approximately 1 mm.
- We roll the rolled out layer into a loose roll so that it does not stick together too much; you can first sprinkle it with a little flour.
- Cut the roll into pieces 2 cm thick.
- Pour up to 0.5 liters of refined oil into a frying pan, fry the pieces on both sides, then let each of them drain on a paper napkin.
- You don’t need to sprinkle the brushwood with powder, but dip the slightly cooled ones into standard sugar syrup.
A very simple recipe - minimal effort and amazing results

So let's not torment the household with waiting and get busy preparing this culinary masterpiece. Just check if you have vodka in the house. Don’t worry, at high temperatures the alcohols will completely evaporate, so you can safely give the brushwood to children. How to cook thin crispy brushwood
The brushwood dough is kneaded very simply by gradually mixing all the ingredients. First, add salt to the eggs, lightly beat the mixture with a whisk (or fork) so that the salt is well and completely dispersed.
Then we add a spoonful of regular vodka - it is this that gives the brushwood its peculiar crunch and unique fragility. To be honest, I haven’t tried kneading egg dough for brushwood without vodka, so I can’t say whether it will also crunch if you don’t add it. Of course, no one will feel even a hint of alcohol in the finished brushwood. There will be no taste or smell left. Just crunch. ;)
Shake the egg mixture one more time and gradually begin to add flour. Regarding the amount of flour. Previously, 1 tbsp was always enough for 2 eggs, but this time the flour was apparently wet and it took as much as 1.5 tbsp. with a small mound. The dough should be elastic, almost like egg noodles, but at the same time a little sticky to your hands, which in the future will definitely require flour for dusting.
We hide it in a bag and send it to rest in a cool place for 30-40 minutes, you can even put it in the refrigerator.
Divide the finished dough into 3-4 parts, so it will be more convenient to roll it out. We leave one for work, we hide the rest again in a bag - the egg dough begins to dry out very quickly.
Roll out a piece of dough into the thinnest layer possible. This is quite difficult and you will have to put in a lot of effort, but the thinner you can roll out the dough, the more airy your brushwood will be. We cut the rolled out layer into strips, from which you can form twigs of a traditional shape (cut the middle and turn one edge of the workpiece through the cut), or leave them as is, just in strips. This will not affect the taste of the brushwood.
We cut the dough into pieces and only after that let the oil heat up. When the frying starts, you won’t have time to do anything except put the workpieces into the boiling oil and take out the finished brushwood. It cooks very, very quickly.
There should be enough oil in the frying pan (or saucepan) so that the brushwood drowns in it. A sure sign that you are doing everything right: when immersed in oil, the brush instantly swells and curls into funny curls different shapes. By the way, this is why you can simply cut the dough into strips, and still each of them will get its own unique shape.
Remove the finished brushwood from the oil and place it on paper that can absorb excess oil. I use regular baking parchment.
Serve the brushwood sprinkled with powdered sugar.
Note: since there is absolutely no sugar in the dough, such brushwood can be an excellent alternative to chips or crackers if you sprinkle it with a little salt and spices. Believe me, it is also very, very tasty.

So, I haven’t written for a long time, the last article was more than three weeks ago. And today I want to please you with brushwood. Brushwood in my notebook is listed in two versions: “Soft brushwood recipe” and “Crispy brushwood recipe.”
I suggest considering the first option. Don’t let the word soft scare you; it will definitely have a crispy crust. The fact is that even after lying there, if you don’t eat it right away, it doesn’t become completely wooden, but remains a little soft inside.
The other recipe is a little different, but not fundamentally. As I prepare crispy brushwood, I will definitely record a video, take a photo and write an article for you.

We pull one end through the slot, as if turning it inside out. Our brushwood is ready for frying. A rectangular shape is an option; you can make triangular and round ones with notches like the sun. In any case, it will be beautiful when finished.
Step 9 Pour vegetable oil into the container in which we will fry and heat it up. The size of the saucepan or ladle depends on how much oil you don’t mind pouring out later. I usually make it in my smallest saucepan. Yes, it takes a little longer to fry than if you throw all the dough at once into a bucket pan, but you save a lot of oil! Fry the brushwood on both sides until golden brown.
Be sure to sprinkle the finished brushwood with powdered sugar.
