Ingredients
Strawberries – 1 kg
Water – 5 l
Sugar – 100 g
Yeast – 25 g
Honey – 250 g
Citric acid - on the tip of a knife
Raisins – 2 tbsp. spoons
1. Rinse the berries, sort them and squeeze out the juice.
2. Place the remains of the berries in an enamel bowl and fill with water. Bring to a boil, remove from heat and strain after 10 minutes.
3.Add squeezed berry juice, sugar, honey, ground with yeast, citric acid. Mix everything well and put in a warm place for 1-2 days.
4.Pour the kvass into bottles, after adding 5-6 raisins to each. Store bottles tightly sealed in a cool place.
Mint kvass
Ingredients
Mint – 2-3 sprigs
Water – 1 l
Rye crackers – 2 handfuls
Granulated sugar – 1.5 tbsp. spoons
Dry yeast – 10 g
Raisins – 1 teaspoon
1.Crush the rye crackers, place in the oven and brown at low temperature for 10-15 minutes. Pour them into an enamel bowl and fill with water. Stir thoroughly, cover with a lid and place in a warm place for 1.5-2 hours. Don't forget to stir periodically.
2. Strain the resulting liquid, add yeast diluted in water, granulated sugar, mint. Leave at room temperature for 10-12 hours.
3.After this, strain the kvass through cheesecloth and pour into bottles, adding 2-3 raisins to each. Seal the bottles tightly, keep at room temperature for another 2-3 hours, and then store in the refrigerator.
Custard Cossack kvass
Ingredients
Sourdough – 200 g
Sugar – 5 tbsp. spoons
Flour – 400 g
Water – 3 l
Salt – 1 tbsp. spoon
Mint – 1 sprig
1.Take a large saucepan and place the starter (at room temperature) in it. Add 1 tbsp. spoon of sugar. If the starter is liquid (the ideal consistency is thick sour cream), then you can stir in a little flour. Place in a warm place.
2. While the starter is “reaching”, sift the flour and pour boiling water over it (make sure that no lumps form!). Add the remaining sugar, salt and mint. Cool the resulting jelly to room temperature.
3. Pour flour jelly over the sourdough. There is no need to stir, just wrap the kvass and put it in a warm place.
4.After about three hours, foam will form and the dough will begin to rise. Then immediately move it to the cold and let it stand until ready.
5.Add salt to the resulting kvass. You can also season the drink with horseradish or sour cream.

1. Homemade lemonade
This is perhaps the simplest option. At the same time, it perfectly removes thirst. It can be sour or sweet with a slight sourness - it all depends on you.

Half a lemon

Preparation:
The juice is squeezed out of the lemon and poured into a jug for lemonade. Sugar and chopped pulp and lemon zest are added there, everything is mixed and filled with sparkling water. The drink is ready! If desired, you can add ice before serving.
In fact, the amount of sugar and lemon juice in this drink is a matter of taste. Some people like it very sour, others prefer to add more sugar. 2. Turkish lemonade

Preparation:
Wash the lemons very carefully, because we will use them together with the skin. Then we cut them into arbitrary pieces (not large, but not very small).
Then we put them in the mixer, add a little sugar to make it easier for them to grind, and add mint leaves, if you have them. Everything won’t fit into the mixer at once, so we do it in portions. For those who don’t have a mixer, a hint: you can grate it, but be sure to use some sandpaper. Grind everything into a paste. Fill our ground lemons with water, add sugar to taste (just don’t forget that sugar takes a long time to dissolve in cold water, so don’t over-sweet it). Do not pour hot water under any circumstances, otherwise you will end up with a bitter drink.
Now we put our pot of lemonade in the refrigerator overnight. Again, do not leave the drink to infuse at room temperature; it will taste bitter.
The next morning we take the pan out of the refrigerator. The lemons will sink to the bottom. Now this whole thing needs to be strained. You can do it through gauze, or through a sieve, whichever is more convenient for you. Well, that's all, our drink is ready.

3.Refreshing julep

The infusion will instantly change its color to bright red and you will have an excellent sorbet.
After a few hours, when the infusion has cooled, put the jug in the refrigerator and drink in the morning, on an empty stomach. This is not only a cool drink - it is also medicinal! In the heat it will support your heart, and even arterial pressure will affect in the most positive way.
In the same way, sherbet can be made from mint, tarragon and rose petals (only the rose must be a special type, do not try to use a bouquet given last Friday to make sherbet).
10. Ayran
The main advantage of ayran is that in the summer heat it simultaneously quenches both thirst and hunger. On top of everything else, it is also useful. It contains a lot of proteins pure form, lactic acid, vitamins, beneficial microorganisms, etc. Ayran helps improve digestion, appetite, and promotes the absorption of fatty foods.
Preparation: we will need 300 ml of natural yogurt without additives (or katyk, or kefir), 150 ml of carbonated mineral water, dill, parsley, cilantro, basil, a pinch of salt and crushed ice.
1. Cool yogurt (or katyk, or kefir) and Borjomi in advance. Sort the greens, wash and dry with paper towels, chop very finely.
2. Combine yogurt and mineral water, beat with a whisk until smooth, and you will get the best ayran that ever happens in the world. Add chopped herbs and salt.
Place the glasses on a dish filled with ice and serve - drink to your health, because this is both a drink and food at the same time. If you want to decorate the taste of ayran, you can do this with dried herbs: thyme, mint, basil and... even green apples. Let it brew, let the aroma pass into the drink, and then add ice and drink to your health!
In the summer, in the heat, you are constantly thirsty, and this is natural. The best thing to do is drink plain, clean water. But this is not always enough: you probably want to quench your thirst with more interesting drinks, in order to also enjoy the rich taste.
It’s better to give up lemonade, cola, sweet soda, and at the same time exclude “juices” and “nectars” in bright packages from your diet: there’s nothing healthy in there, and they don’t quench your thirst, but, on the contrary, make you want to drink even more.
It's better to spend a few minutes preparing a natural, healthy and cooling drink. Our recipes will help you enjoy and cool down:
1) Summer refreshments - Fruit iced tea
Make strong green tea, and when it cools, pour it into glasses and add any fruit, cut into small slices: orange, apple, grapefruit, lemon... A couple of ice cubes will make the tea especially pleasant.
2) Summer refreshments - Lemon iced tea
Brew strong tea, cool it and place it in the refrigerator. Enrich the strained drink with lemon juice (half a lemon per 1 liter of tea), add chopped lemon peel, a few mint leaves and a couple of fonts of essential mint oil. Very refreshing!
3) Summer refreshments - Homemade lemonade
For one and a half liters of carbonated mineral water, take one and a half glasses of clean still water. Add the juice squeezed from 2 lemons and 6-7 tablespoons of sugar, stir everything until the sugar dissolves. After the drink has cooled for several hours, it can be served.
4) Summer soft drinks - Real kvass
Slice Rye bread small pieces to make about two handfuls. Place the bread in a three-liter jar and pour boiling water to the top. Let it cool, and when it reaches room temperature, add the finished starter - you will need 3 tablespoons and the same amount of sugar. Place the jar of future kvass in a warm place and cover it with several layers of clean gauze. Let the drink stand for 12 hours, sometimes you need to stir the contents of the jar. The kvass is ready, now it should be strained and cooled.
5) Summer soft drinks - Berry juice
Boil 2 liters of water with sugar. Take 1 kg of soft berries or fruits as desired. Cherries, strawberries, currants, cranberries, etc. are suitable. They need to be crushed using a blender, and then mixed with water, cooled and served. It’s even healthier to replace sugar with honey, but you can’t boil it, but add it to warm boiled water.
Prepare and drink delicious and healthy summer soft drinks for your health! But it’s better to forget about strong coffee and alcohol during the heat. If you really want to, you can indulge in a glass of cool white or red wine after sunset. By the way, the vaunted beer does not quench your thirst at all, rather, on the contrary. Therefore, do not get carried away with alcoholic drinks in the summer.
