- Afterwards you will need to squeeze out the juice and dilute it with boiled water. The amount of water is determined by individual taste preferences. On average, from half a liter to a liter of water is used per 200 grams of berries.
- Then a sweetener is added to taste - sugar or honey, usually a few tablespoons for every half liter.
If there were originally a lot of berries, then it’s enough to put the treat in the refrigerator and drink it whenever you want.
If there are few berries, they are filled not with water, but with a decoction of the resulting cake. To do this, the raw material obtained after pressing must be placed in a container, filled with water and boiled for ten minutes (the heat should be minimal). After the broth has cooled, mix it with juice and add sugar or honey. This drink will be richer and tastier; it retains more vitamins.
Note: if you boil currant cake without squeezing the juice, most of the vitamins will not be retained in the drink, since ascorbic acid is destroyed under high temperature.

- Squeeze the juice from the orange and remove the zest.
- Mash the currants with a masher, boil the cake for 10 minutes along with ginger, cut into thin strips, and orange zest.
- Then we take out the zest, pour in the berry and orange juice, bring everything to a boil and turn it off immediately.
- Let the fruit drink steep under the lid for 15 minutes, add honey and sugar, stir well until they dissolve, serve, garnished with orange slices.

But if there are not very many berries, the juice can be filled not with water, but with a decoction of currant pulp. We put what is left after squeezing the juice into a saucepan, fill it with water and put it on the fire. Bring to a boil and let simmer over low heat for five to ten minutes.
When the broth has cooled a little, mix it with juice and add sugar. The drink turns out richer and even tastier, it just takes a little longer to prepare and cool.
You can boil not the strained cake, but the entire crushed mass. There is less hassle, but also a little less vitamins; boiling destroys the main advantage of currant berries - vitamin C.
Fruit drinks from other berries are prepared in the same way: cranberries, lingonberries, and so on.
Frozen currant juice
Fruit juice is made from frozen currants in exactly the same way. It is easier to crush unfrozen berries, but this is convenient for everyone.
Here is one interesting recipe.
Take 200 grams of frozen currants, put them in a blender, add the zest of one lemon, five tablespoons of sugar and half a glass of boiled water. Beat everything, add another half liter or a little more (to taste) water, squeeze the juice from the peeled lemon and beat again.
The resulting fruit drink does not need to be filtered. For example, I like it better this way.
Other options for making currant juice
- You can mix black and red currants together.
- Currants, blueberries and cranberries go well in fruit drinks.
- Add honey to the prepared fruit drink instead of sugar or along with it.
- For those who like very sour drinks, you can add honey and lemon juice.
Freezing berries
If you have frozen berries in your freezer all winter, especially from your own dacha, then you will never lack vitamins. Berries perfectly retain all their vitamins if they are packaged in freezer bags, which are sold everywhere.
I have a whole one for this purpose freezer, but for some reason there is always not enough space. But there is an opportunity to save it.
I don’t really like this method; I prefer to freeze whole berries, but sometimes I have to resort to it.
We take currant berries (strawberries, gooseberries, etc.), pass them through a meat grinder and mix with sugar. For a kilogram of currants you need one and a half kilograms of sugar. But I’ve made less, and it still keeps well.
