Hello, dear readers. The tomato season is already ending, it's very cold here. It is especially cold at night, so it is increasingly rare to find such an abundance of tomatoes at the market as in summer. But I've been wanting to make pizza sauce for the winter for a long time. Therefore, getting up early on a day off, we went to the market to buy a tomato. We bought “Debarao royal” tomatoes. My dad grew these tomatoes, and at one time he really liked them. These are fleshy and tasty oblong-shaped tomatoes. The shape is somewhat reminiscent of cream tomatoes. We also bought sweet bell peppers, onions and garlic, except hot pepper, since my sauce will not be spicy. After all, the main pizza lovers in the house are children, and they don’t like spicy dishes.
The sauce turned out to be quite interesting, spicy, thick, and sweetish. Tomato sauce It reminded me a bit of pizza sauce from a pizzeria. We all liked the taste; the sauce turned out to be tender, homogeneous, and aromatic.
This year we have prepared a lot of ketchups and sauces, so there will be a varied selection this winter. We started seriously preparing for the winter at home. As promised, we tried various recipes and shared the result with you. We have recipes with step by step photos graphs. This allows you to easily prepare your favorite dish.
We prepared ketchup with apples, ketchup with onions, yellow tomato ketchup, and pizza sauce.

Pizza sauce for the winter. Recipe with photo
Ingredients:
- 2 kg. tomatoes
- 300 grams of onion
- 1-2 heads of garlic (50 gr.)
- 300 grams of sweet bell pepper
- 1 tbsp. spoon of salt
- 1 tbsp. heaped spoons of Provençal herbs
- 3 tbsp. spoons of sugar (I added 4)
- 50 grams apple cider vinegar
- 50 grams of vegetable oil (refined)
The first thing to do is wash the vegetables under running water and prepare them. I have 2 kg. tomato, 300 grams of onion, I weighed the onion and it comes out to 4 medium onions.
300 grams of bell pepper and it came out to 3 pieces. Ratunda pepper variety. This is a fairly meaty, sweet and aromatic pepper. I also took 1 large head of garlic, but if you have small heads of garlic, then take two.
If desired, you can add hot pepper to the ingredients. Add the amount of pepper at your discretion. It all depends on how spicy you prefer.
How to make pizza sauce like in a pizzeria
I cut the pepper into slices, removing the tail and seeds. I peel the onion and also cut it into 4-6 pieces, depending on the size. I peel the garlic. I put the tomatoes in boiling water and peeled them off.
I would also like to note that to make your pizza sauce red for the winter, buy ripe tomatoes.
Now we need a saucepan with a thick bottom, in my case it’s a cauldron. I cut the tomatoes in half. I placed peppers, onions and garlic in the cauldron.
I put everything on the fire and simmer until the vegetables become soft. There is no need to add water, as the tomatoes are juicy and have released a lot of juice.
I stewed the vegetables over low heat for 1 hour. During this time, the vegetables were cooked quite well and became soft. This is what stewed vegetables look like after an hour.
I specifically removed the skins from the tomatoes so that I could puree the vegetables using a blender.
I chopped the vegetables with a blender, but there were pieces of tomato seeds. Our old blender with a power of 280 watts. If you have a good blender and powerful enough, then you will be able to grind everything into a homogeneous puree.
This recipe specifically involves making puree in a blender. It's not, so we need to achieve a smooth puree for the sauce.
I add spices to the resulting tomato sauce for pizza. I took 4 tbsp. spoons of sugar (you can add more or less, it all depends on how sweet you prefer the sauce).
After adding spices, I stir the sauce. Provençal herbs include many aromatic spices (oregano, marjoram, thyme, basil, mint, thyme, etc.) so there is no need to add any additional herbs or spices.
I stir the sauce with a spoon. You can also add a little black or red ground pepper to taste and if desired.
I boil for 20-25 minutes, from the moment of boiling. Stir the sauce with a spoon while cooking.
At this stage, you can already pour the sauce into sterile jars and roll up the lids. This is what the sauce looks like, I just took it off the heat for just a few seconds.
But the children were a little confused by the pieces of bones that were not completely crushed, so I decided to additionally rub the sauce through a sieve. The sauce turned out even more homogeneous. You don't have to do this.
I put the finished sauce on the fire for another 10 minutes. And then pour it into sterile jars. My pureed sauce turned out to be this consistency. The consistency is thick, of course not the same as that of, it generally turns out to be a paste-like puree.
From this amount of ingredients we get 3 half liter jars of pizza sauce, but taking into account the fact that I additionally evaporated the liquid from the sauce, I got 1 liter 0.300 ml. sauce.
But the sauce turned out thick, smooth, and very tasty. We all really liked the sauce, and my husband noted that the taste of the sauce is really similar to the one that is used on pizza in a pizzeria.
For the winter we closed 2 half liter jars and 0.300 ml. left it for pizza, try it.
Our children have been asking us to cook for a long time. This sauce really tastes like pizza sauce from a pizzeria. Rich, tender, tasty.
We sometimes order pizza from a pizzeria when we go for a walk in the park or out of town. But who can argue that homemade pizza tastes better, so we decided to make sauce preparations for the winter. We liked the recipe, so we will prepare another portion of the sauce.
This sauce can be used not only for pizza, but also served with mashed potatoes, pasta, meat, chicken, turkey, and other dishes.

There are many ways to prepare plums for the winter. I prefer to store plums in the freezer. When frozen, the taste, appearance of the product and vitamins are preserved. Frozen plums in syrup are most often used by me for baby food, preparing desserts and drinks. Children who often eat poorly eat this preparation with pleasure.
I make this preparation specifically for preparing homemade pizza in winter. Usually during this cold period, tomatoes and bell peppers are quite difficult to find in stores. And if they do exist, they are definitely tasteless - oak, specially grown in greenhouses and often with the addition of various, not always useful, fertilizers. Or very expensive.
Therefore, having such a preparation on hand, you can not fray your nerves, running through trays with vegetables and fruits, but simply take a jar from the cellar and add tomatoes and peppers to the pizza.

Cooking time: depends on the number of cans, but you can do it in 40-60 minutes.
Ingredients for preparing a small 320 gram jar:
Currant leaf – 1 pc.
Sugar – 1.5 tsp.
Salt – 0.3 tsp.
Vinegar essence – 0.5 tsp.
Bay leaf – 1-2 pcs.
Water – 120 ml
Preparation progress:
For this preparation, it is better to take strong and dense tomatoes. We will cut them into rings and it is very important that they are meaty and contain as little juice as possible. Otherwise, during the pickling process, the tomatoes may become very soggy and the product will lose its appearance.
First, let's prepare the jars. My jars are small, 320 grams. And I indicated the number of ingredients for exactly one such jar. This is the jar I usually use for pizza. Therefore, it is very easy to calculate how many of these jars you need to prepare. Let's say you make pizza every two weeks. It turns out that for 3 winter months you will need 6-7 of these jars.
So, we wash each jar well with soda and laundry soap. Then we scald it several times with boiling water or bake it in the oven at one hundred degrees.
At the bottom of each jar we place a currant leaf and a horseradish leaf.
Then we take the garlic, remove the husks from it and cut it into slices. Put the garlic in a jar.
Now add a few peas of black and allspice to the jar.
Let's get to the vegetables. We wash it very well.
Cut the tomatoes into slices 5 millimeters thick. I have small tomatoes, and I cut each tomato into 4-5 pieces.
Then we take pepper. Cut it in half and remove the seeds. Cut the pepper into cubes or strips.
Place vegetables in layers in jars. I always add a layer of pepper first.
Then I cover the peppers with tomatoes. Then pepper again. And again tomatoes.
At the end I throw in a couple of slices of chopped garlic.
Now we need to prepare the marinade.
Put it in a saucepan Bay leaf, sugar and salt. Fill everything with water. Let the salt and sugar dissolve and bring to a boil. Boil for 3 minutes and remove the marinade from the stove. I indicated all the proportions in the ingredients.
Pour the marinade into jars. We rotate each can around its axis so that excess air escapes.
Lightly cover the jars with sterilized lids.
Take a saucepan. Pour water into it - enough so that it can hide the jar up to its hangers. Place the jar in a saucepan and bring the water to a boil. Boil for 3 minutes and remove the jar.
We add a loan to each jar vinegar essence 70% for half a teaspoon. Screw the lids of the jars tightly. And turn each jar upside down. Cover with a dry towel. Let the jars sit like this for 2-3 days. If the jars do not leak, become cloudy or cracked, then they can be sent to a cold place for storage.
