Cranberry Lemon Cake
Lemon and cranberries complement each other perfectly in sweet baked goods.
So, for a universal shortbread and yeast pie with cranberry-lemon filling you need to take:
- 400 g butter (margarine);
- 100 ml milk;
- 50 g fresh yeast;
- 410 g sugar (10 g – in the dough);
- 520 g flour;
- 1 lemon;
- 100 – 150 g cranberries;
- 10 g vanilla sugar.
How to bake:
- Dissolve sugar and yeast in milk. Chop the butter into the flour. Combine the resulting crumbs with the milk mixture. Gather the dough into a ball and refrigerate.
- Scald the lemon with boiling water and pass through a meat grinder together with the cranberries. Mix the resulting pulp with sugar.
- Divide the dough in half. Roll out one part into a layer 10 mm thick and distribute the filling over it. Cover it with a second similar layer. Pinch the edges of the pie and bake until done (40 minutes over medium heat).

To begin with, you can prepare the filling, since the dough will be ready immediately after kneading, it does not need to rise. I had cranberries, only frozen. We transfer the berries into a ladle, add sugar and boil it all on the stove.

Cranberry vitushki are very good in winter and in early spring, when you want vitamins, but the berry season is still ahead! Although ruby berries do not contain as much vitamin C as currants or citrus fruits, cranberries are a wonderful remedy for good health! Fresh berries and drinks from them - cranberry juices and juices - help cope with colds, act as an antipyretic and cleanse the body of toxins and harmful bacteria. Of course, if the bacteria taste such sourness, they will run away instantly! Unless those who can’t eat sour foods shouldn’t get carried away with cranberries. But a couple of berries in a bun - why not?
Ingredients:
For 12-15 pieces:
- 25 g fresh yeast;
- 2 tablespoons sugar;
- ¾ glass of milk;
- ¼ teaspoon salt;
- 2 eggs;
- 3.5 cups flour;
- 50-60 g of softened butter (take it out of the refrigerator in advance);
- One and a half glasses of fresh cranberries;
- Half a glass of sugar;
- Lemon or orange zest.
How to bake:
Mix the dough for yeast dough: crumble the yeast into a bowl, add a spoonful of sugar and grind until liquid, then pour in half a glass of warm milk and stir. Sift 1 cup of flour and knead a thin dough. Place the resulting dough in a warm place for 15-20 minutes. I place a bowl of dough on top of another bowl, into which I have poured warm water, and cover the top with a towel.
Now the dough has risen well, bubbles have appeared - well done yeast, it works great! It's time to knead the dough.
Pour in the rest of the warm milk.
Add the eggs (they should have been beaten with a second spoon of sugar, but I forgot and just put them in).
Gradually sift the rest of the flour, add salt and add soft butter.
Knead the dough - soft, almost not sticking to your hands. After kneading it for 5-10 minutes, place it in a greased bowl. sunflower oil, and deep enough so that the dough does not “escape” from it. Cover again with a towel and place in a warm place for 30 minutes.
While the dough is rising, prepare the cranberry filling.
Wash the cranberries, dry them a little in a colander and turn them into puree using a blender.
Mix with sugar and zest and cook, stirring, until the filling thickens.
It is best to stew cranberries in a thick-walled container, such as a cast iron cauldron. Then the excess liquid will quickly evaporate, and the filling will not burn, but will become thick and beautiful, similar to ruby jam. Place the filling in a wide plate and let it cool.
Gently knead the risen dough, sprinkle the table with flour and roll out the dough into a rectangle about 30 cm wide, about 60 cm long, 3 mm thick.
Spread the cooled cranberry filling, not reaching 1.5 cm from the edges. There weren't enough cranberries, as we stole some for cranberry juice:), so I sprinkled the rest of the dough with cinnamon sugar.
Now we wrap a third of the rectangular layer towards the middle.
And the second third is on top of the first, so it turns out to be a smaller layer, 30x20 cm.
Roll this cake carefully so that the filling does not escape with a rolling pin to make it wider.
And cut into strips about 3 cm wide.
Line a baking sheet with high-quality parchment (so it doesn’t stick!) and grease it with sunflower oil.
We twist each strip several times and glue the ends together. You get such beautiful little curls.
Place them on a baking sheet at a distance of 5-6 cm from each other.
While the oven is heating up, let the baking sheet with the buns sit on top of the stove, warm, for 5-7 minutes.
Place the buns in the oven and bake at 200-210C for about 20-25 minutes, or maybe 15 is enough, depending on your oven.
When the buns are nicely browned, they are ready!
Remove from the baking sheet with a spatula and place on a plate to cool slightly.
And then sprinkle the cranberry buns with powdered sugar through a strainer. White, sweet powder elegantly contrasts with the cranberry filling and golden brown crust, and also creates a harmonious taste thanks to the combination of sour cranberry notes and sweet sugar notes.
Alternatively, you can grease the curls with icing sugar.
Rich, soft, sour-sweet cranberry curls are delicious with a glass of cranberry juice! Try it, the combination is amazing, and a cranberry drink is prepared faster than compote, turning out healthy and refreshing. You need to spin the washed cranberries in a blender or simply grind them in a glass with sugar, and then add boiled water at room temperature and stir. To prepare yeast dough, you first need to sift the flour through a sieve. Then add dry yeast, sugar, salt, softened butter or margarine. Mix all ingredients thoroughly, gradually adding warm milk. You need to knead the dough until it stops sticking to your hands. If necessary, add a little more flour.
Cover the finished yeast dough with a clean towel and place it in a warm place. After an hour, knead it again, stretch it into a rope, which must be cut into pieces of equal thickness. Form them into balls, cover with a towel and let stand a little longer.
In the meantime, you can start filling the pies. Wash the cranberries and mix them with sugar. To prevent the filling from being too liquid and leaking out of the pies during cooking, add 3 tablespoons of potato starch to it.
Now form each ball with your hands into a flat cake, place the cranberry filling in its center and wrap it in the shape of an open envelope. Place the prepared cranberry pies on a greased baking sheet and bake in the oven preheated to 180-200 degrees. As soon as it appears golden brown crust, this means the pies are ready.
