Pour egg white into a mixer bowl (combine, blender or just a saucepan), add water, but not all - about 50 ml. Just mix with a spoon and leave for 5-8 minutes. Then add a teaspoon of lemon juice and beat. It is better, of course, to regret yourself and use a blender, mixer, combine. Beat until the bubbles become small and the mixture does not increase slightly in volume. I use a mixer, whisk about 3-5 minutes.
Now pour out the icing sugar (everything measured) and begin to mix (again in the mixer, at low speeds).
If I see that the powder does not mix, it remains dry, I can add quite a bit of water (out of the remaining 60 ml). In this case, I added 2 teaspoons (I add one at a time, mix and look each time).
Ice should get thick. In America, his name is stiff peak, i.e. solid peaks. If you take out a spoon, then the mass stretches, and then does not settle. This texture is suitable for storage. If you are not going to use icing right now, put it in a jar and put it in the fridge.
And if you want to start decorating gingerbread right now, then go ahead.
We need food dyes. I like American gel, we can also buy from us, for example, Americolor or Chefmaster (in any online store a la “everything for the pastry chef”).
Also need packages. You can use regular plastic bags (for breakfast, for freezing, for storage) or order special cooking bags on Aliexpress, they are a bit more comfortable, but it doesn’t matter. Do not forget the clamps (I haven't found any better ones yet).
Another tool that is simply vital is ... a regular toothpick! It will help and color to give the glaze, and pouring spread, and fix the oblique contour, and remove all unnecessary.
Before starting to draw, I make for myself simple sketches in a notebook.
In the New Year's decor, I like the white and blue gamma. Put a piece of our thick glaze in a separate small bowl, take a blue dye (at the very tip of the toothpick) and mix. If you get too dark color, you will have to add more white glaze. Having achieved the desired shade, "liquefy" the icing.

In the remaining icing, add a little more water, bring sour cream to the consistency, we also shift it into a separate bag and set it up. Now an important point. Need to cut a corner. For the contour, it is very thin - 1-1.5 mm wide, for filling it can be 2-3 mm thicker.
Similar procedures are carried out for each shade of glaze, which will be involved in the decor.
Now you can decorate our gingerbread. For example, just put a contour of snowflakes on the "bare" cookies. Here it is necessary that the hand was "firm" and not tremble.
Another option is to first make a background fill (but before that, draw a path anyway so that the fill does not spread out over the edges). In this case, it will be necessary to allow the background to dry completely, usually 2-3 hours.

1 yolk
Cooking method:
Sift and mix all dry ingredients (except powder).
Finely and quickly chop ice oil into cubes of 5 mm and pour it into a dry mixture.
Stir the dough with your hands and add the powder, honey, and yolk.
Stir again. It should make a very cool smooth dough. If it crumbles, add honey.
Roll the dough into a ball and wrap a film in the refrigerator for an hour.
Roll out a layer 3-6 mm thick and cut the molds.
Preheat oven to 170 degrees.
Bake 8-10 minutes.
4. Vanilla Crescents
You will need
400 g wheat flour
300 g butter
100 g sugar
150 g almond flour
1 egg
2 tsp vanilla (can be replaced with 3 bags of vanilla sugar)
1/2 lemon peel
3 tablespoons of powdered sugar and 1 tsp. vanilla for decoration
Cooking method:
Mix wheat flour with almond flour and add vanilla.
