- Marinade cook simply. I calculate the amount of water per liter jar, pour it into a saucepan, bring it to a boil and add a couple of tablespoons of salt and two or even three (for an amateur) cups of sugar.
- Vinegar (one teaspoon is enough), pour in boiling marinade.
- Marinade pours ready for canning vegetables and close with sterile caps. Put the jars in a dark place, turn them over, wrap them in a towel and leave to cool at room temperature. It is done. The next day, sweet pickled cucumbers for the winter shift in the pantry.

I love to roll beautiful and bright jars for the winter. With what only cucumbers do not preserve. With pepper, apples, onions, red currants. Ingredients:
- Cucumbers - 500 grams;
- Dill (umbrellas) - 2 pieces;
- Carnation seeds - 3 pieces;
- Pepper - 5-6 pieces;
- Salt - 2 tablespoons;
- Sugar - 2 tbsp. spoons;
- 1 teaspoon mustard seed.
How to cook:
- I select cucumbers of medium size, as always I fill with seven or eight hours of cold water. I change the water three times.
- My jars, dry land, sterilized and put spices on the bottom: one teaspoon of mustard seeds, parsley, peppercorns, dill (umbrellas or sprigs). Mustard combines well with other spices.
- Banks pour boiling water, drain water twice. Marinade cook as usual. Pour water into a saucepan, bring to a boil and add a couple of tablespoons of salt and the same amount of sugar.
- I put the finished jars with boiling water and cover them with sterile covers. Jars turn over and put in a dark place to cool.
The next day I send my sweet pickled cucumbers for the winter with grapes to the basement. Recipes, as you can see, are quite simple, but very tasty.
I always preserved cucumbers in the traditional way with obligatory sterilization, but this year I decided to experiment and make canned cucumbers without sterilization. The result is excellent: cucumbers are good, and the taste is much tastier than with sterilization. I advise you to try, perhaps, and you will like this recipe for canned cucumbers without sterilization.
Ingredients:
(3-liter jar)
- cucumbers - how many will fit in a 3-liter jar
- grape or currant leaves - 7 pcs.
- cherry leaves - 7 pcs.
- 1 fennel stem with inflorescence
- a piece of horseradish 2x3 cm
- half pepper
- 1 bay leaf
- 4 tbsp. salt without a hill
- 5 tbsp. sugar without slides
- 5 tbsp. table 9% vinegar
- For sacking cucumbers, it is very important to choose cucumbers of the “right” variety, the best mash is “Mashenka f1” or “Crispin f1”, I do not advise for preservation to buy dessert cucumbers or large salad.
- Pour cucumbers with cold water, wash thoroughly. Remember that cucumbers are very capricious in conservation and do not forgive mistakes (dirt). Therefore, it is better to spend a little more time to thoroughly prepare the original products and utensils than to bite your elbows
- Leave cucumbers in water for 4-5 hours. During this time, change the water 3-4 times.
- Now prepare the dishes. Banks and lids are carefully washed with soda, and then sterilized. How to sterilize dishes properly.
- Hot pepper, a branch of dill, all the leaves, including bay leaf, carefully wash. Horseradish clean and also certainly wash.
- In a clean 3-liter sterile jar we place currant leaves (or grapes), cherry leaves, fennel stalk with an umbrella on the bottom, put a piece of horseradish and a strip of bitter pepper.
- Put cucumbers tightly in a jar. On top of the cucumbers put the stalk of dill seeds (or color of dill).
- Fill cucumbers with boiling water almost to the top of the jar. Cover the jar with a sterile metal lid.
- Under the bottom of the jar we put a terry towel, and the jar with cucumbers is well wrapped with a blanket.
- Cucumbers leave to infuse for 30 minutes.
- We remove the blanket, then, holding the lid, gently pour the water from the jar into a clean pan.
- Add to the water bay leaf, 4 tbsp. salt without slides, 5 tbsp. Sahara. I draw your attention to the fact that for the preservation of cucumbers and other vegetables only stone salt is always used! Iodized or purified salt "Extra" is not suitable for canning (something that the housewives never brag about is happening).
- Bring water to a boil, boil brine for 3-4 minutes, salt and sugar should be completely dissolved.
- In a jar of cucumbers put 5 tbsp. vinegar, and then pour cucumbers boiling brine.
- A jar of cucumbers covered with a metal lid (threaded or plain) and roll up.
- We turn the 3-liter jar with canned cucumbers upside down, wrap well and leave it under the blanket until it is completely cool, about 12 hours.
- The next day, turn over the cucumbers and put in storage in a cool place (storage room, cellar) away from heating appliances and sunlight.
- That's all, canned cucumbers are ready, quickly, simply and without sterilization. To make the rolled cucumbers crispy, before serving, open the jar, put a couple of cloves of garlic inside, and then refrigerate in the refrigerator for 2-3 hours.
