Now comes the turn of the potato, cut into cubes. Send it to the pan, mix all the ingredients. Salt, pepper, add boiling water so that the water was flush with vegetables and meat. Cover and simmer on low heat until potatoes are ready.
When the potatoes are easily punctured, add the Bulgarian pepper and ground tomato to the soup, sprinkle with sugar. Bring to a boil, sprinkle with herbs and leave to stew for 40 minutes.
The result is a bright, tasty beef soup. On consistency, it resembles a stew.
Beef Kharcho Soup
Ingredients:
- beef on the bone - 1 kg;
- water - 3 liters;
- carrots, onions - 2 pcs .;
- rice - 0.5 cups;
- garlic - 1 small head;
- tomato paste - 5 tbsp. l .;
- sunflower oil - 5 - 6 tbsp. l .;
- adjika - to taste;
- dried greens, ground pepper, salt, laurel.
Cooking:
Pour the water into the pan, put the previously washed meat, one peeled onion and one peeled carrot into it. Salt, pepper, add a few bay leaves. Put on the fire, after boiling, collect the foam and cover the pan with a lid. Broth should cook for at least 2 hours.
When the meat is ready, pull it and the vegetables out of the pan and filter the broth into another container.
Finely chop the garlic, grate the carrot, cut the onion into thin half-rings. Pour tomato paste into the pan, put the garlic and fry for a couple of minutes. Add onions, mix well and cook until soft. Add carrots to the mixture. After 5 minutes, salt and dilute zazharka soup ladle broth. Give boil and lay out the ready frying in the broth.
Meat is separated from the bone and cut into small pieces. Dip it in the broth, put the washed rice, dried herbs, adjika, if necessary, add pepper and salt. On minimal heat, the soup of the kharcho stews until rice is cooked.
Step 1: prepare the meat.
Carefully wash the pork and veal under running water and lay out on a chopping board. Using a knife, clean the meat from the veins and films. Now cut the components into medium pieces and put them in a clean pan.Step 2: prepare carrots for broth.
Using a knife, peel the carrots and rinse them thoroughly under running water. Then lay out the vegetable in a clean plate and leave it aside for a while.
Step 3: prepare the onion for broth.
Using a knife, clean the onions from the husk and rinse thoroughly under running water. Now we shift it into a container with carrots. Attention: for cooking broth, we will definitely use vegetables, because they will give it aroma and beautiful color.
Step 4: prepare the meat broth.
Before cooking the soup, we need to boil the broth. To do this, fill the pan with meat pieces with ordinary cold water so that it completely covers the main components of about 12–15 centimeters. Attention: the amount of liquid depends on how rich the broth will be. But this is a matter of taste. For example, I love it when the soup turns out to be liquid, so I add more water. So, put the container on medium heat and cover with a lid. When the liquid begins to boil, we must remove the formed foam from the surface of the skimmer and throw it into the sink. Then add a little salt to the pan, peeled carrots, onions, as well as black peppercorns and bay leaf. Mix everything well with a tablespoon, reduce the heat to low and cook the broth under the lid. In the meantime, prepare all the ingredients for the soup. Important: in general, broths on pork and veal prepare very quickly, somewhere 25–35 minutes depending on the cooker. Therefore, from time to time it is imperative to check the readiness of the meat (it should be soft) and mix all the components.
Step 5: prepare rice.
Pour rice in a strainer and rinse under running water. Do this until the liquid becomes clear. Immediately after that, we leave the cereal aside, so that excess water is drained from it.
Step 6: prepare the potatoes.
Using a knife, peel the potatoes and rinse thoroughly under running water. Put the component on a cutting board and chop into cubes. Finely chopped vegetable is moved to a deep bowl and filled with plain cold water so that it completely covers it. This must be done so that the potato does not change color when interacting with air.
Step 7: prepare the onions for the soup.
Using a knife, peel the onion from the husk and then rinse thoroughly under running water. We spread the component on a cutting board and finely chop into small squares. Pour the chopped onion into a free plate.
Step 8: prepare the carrots for the soup.
Using a knife, peel the carrots and rinse well under running water. Then, using a large grater, grind the component directly on the cutting board. Pour carrot chips into a clean plate.
Step 9: prepare the bell pepper.
Wash the Bulgarian pepper under running water and spread on a chopping board. Using a knife, remove the tail and seeds. Then chop the component into cubes and pour into a clean plate.
Step 10: Cooking Frying
Pour a small amount of vegetable oil into the pan and set on medium heat. When the container with the contents is well warmed, pour chopped onions and carrots into it. From time to time, stirring with a wooden spatula, fry the vegetables until soft. Immediately after that, add the cubes of bell pepper to the pan and continue to cook everything 7–10 minutes. Attention: We do not forget to stir the frying all the time with the tools at our disposal so that the components do not burn at the base. When the onion becomes transparent and becomes a delicate brown color, and the pepper is soft, turn off the hotplate and set the container aside.
Step 11: Prepare the greens.
We rinse the parsley under running water, shake off excess liquid and place on a chopping board. Finely chop the greens with a knife and pour into a free saucer. Attention: This component is not necessary to add to the soup. But I love it when the first dishes smell fresh and summer, so I always add greens in 5 minutes until ready and before serving to the dinner table.
Step 12: Cooking the meat soup.
When the broth is ready, add chopped potatoes and washed rice. All carefully stir a tablespoon and wait for the liquid to re-boil. Immediately after this note 15 minutes and cook soup. After the allotted time, pour vegetable frying into the pan. Again, mix everything well and cook the dish. 5 more minutes.
At the end, turn off the burner and cover the container with a lid and set aside. Let the meat soup slightly infused.
Step 13: Serve the meat soup.
Using the scoop, we pour the meat soup into deep plates, sprinkle with fresh herbs if desired, and serve to the dinner table along with slices of bread.
