Today I preserve pickled tomatoes in one-liter jars - one of our favorite winter blanks. Marinade moderately "vinegar", which is important for my husband. And for me the main thing is that the recipe was simple, without problems. In winter, the pickled tomatoes were not bursting with skins, moderately spicy. Of course, my grandmother cooked such tomatoes in three-liter bottles. The family was large and it was worthwhile to open the tomatoes, as they were already gone. Yes, and fresh vegetables in the winter for salads was not found. Now times are very different and I prefer fresh tomatoes in winter. But I am not going to give up marinated. Moreover, the process of conservation for me has become some kind of magical ritual. This is really feminine witchcraft - spreading jars of spices, fragrant tomatoes, conjuring over the marinade. And all in order to open a jar in winter and enjoy this yummy.
These pickled tomatoes are not sterilized. Who cooks for the first time (remember your fear well) - watch the video recipe. In it, I explain in detail all the stages and show that there is nothing difficult in conservation.
Grandma's recipe I counted based on liter jar and marina tomatoes exclusively on it. You can use fresh herbs - cilantro, parsley, dill, basil to taste. And you can and slightly dried bouquet for cucumbers. Also very good at it.
In addition, be sure to add spices to each jar, garlic. You can add 1/4 hot pepper. Get "strong" tomatoes.
So, I give an approximate calculation for a liter jar. And the marinade, which I point out, is enough for about 2 liter cans of tomato. So canning is quite convenient.

Cooking clean 3-liter jars and washed products

Since I have a lot of cans, I have prepared more cuttings. For one can, it is put only a little bit at its discretion! We decompose the cutting to the bottom along zhmenke! This is the beauty that turns out! 
Fill the banks with tomatoes. Put the water on the fire and bring to a boil. 
Fill the tomatoes with boiling water. It is desirable to have a measuring scoop so that you can know for the future how much water is spent on one can. I went to the bank 1.5-1.6 liters. water. 
We wait until the banks cool and drain water. You can back into the pot or pour and collect new water. Boil again. Repeat the procedure again. It turns out that we just twice fill the cans with tomatoes with boiling water (cool and drain).
For the third time, prepare the marinade! The right amount of water, which we measured initially measuring scoop, set to boil.
Add brine ingredients to the water, i.e. if we have more than one can, then, accordingly, the amount of salt, sugar and citric acid is multiplied by the number of cans, because brine is designed for one three-liter jar!
Bring the brine to a boil, put in a jar 1 tablet of aspirin and peppercorns 3-6 pcs. Fill the tomatoes with brine and roll up the lids for the winter!

Not without reason is the so-called recipe - “Yum Fingers” tomatoes have absolutely exceptional taste and look very beautiful. It will help to cook the delicious pickled tomatoes with this recipe. You will lick your fingers by tasting tomatoes from a can and onions in winter! Cooking such tomatoes is very convenient in one-liter jars.
Products:
- red tomatoes - 2-3 kg;
- dill greens - 1 bunch;
- or parsley - 1 bunch;
- garlic - 1 head;
- onion - 100-150 g;
- vegetable oil - 3 tbsp. spoons.
- For the marinade (3 liters of water): salt - 3 tbsp. spoons;
- sugar - 7 tbsp. spoons;
- 2-3 bay leaves;
- vinegar 9% - 1 cup;
- black pepper - 5-6 pcs .;
- or allspice - 5-6 pcs.
Output 5 servings: 5 1 liter jars

Spicy pickled tomatoes for the winter
On one can of three liters you take:
- sweet pepper - 1 piece;
- 2-3 cloves of garlic;
- small onion;
- 3-4 sprigs of parsley;
- 6-8 black peppercorns;
- a tablespoon of salt (with a slide);
- 5 tablespoons of vinegar;
- 2.5 tablespoons of sugar.
How to pickle tomatoes for the winter:

- 2 bay leaves;
- 7 black peppercorns;

- 3-4 tablespoons Sahara;
- 60 ml of vinegar 9%.
Cooking:
Wash tomatoes and chop near the stem. In a sterilized jar, lay currants, dill, laurel, peppercorns, thin carrot mugs (carrots can be cut and sliced) and onion rings, sliced pepper into strips, you can leave some of the vegetables and decompose between the tomatoes.

I cook the marinade until the tomatoes are boiled for the first time. But you can add all the ingredients to this water and you will also get marinade. In the jar pour as many spoons of vegetable oil, how many liters of the bank: 1 liter jar - 1 spoon, etc. Close the jars as soon as pour boiling marinade. Roll up the metal cover. 3. Tomatoes "Kuznetsovski."
Place the tomatoes in a 3-liter jar in rows and 1 sweet Bulgarian pepper cut into 6 pieces. No other seasonings added. Pour boiling water. Soak under the lid until it cools for 20 minutes. Then pour the water into a saucepan, add (at the rate of one 3-liter jar) 150 g of sugar, 60 g of salt, 2 tablespoons of 9% vinegar. Bring the solution to a boil, pour into the jars to the top. 4. "Spicy Tomatoes"
In a sterilized 3-liter jar put red tomatoes. Without everything! Fill with boiling water and leave to cook the marinade. Cooking marinade:
1.5 liters of water one tablespoon of salt, 100 g of sand (it will be half a cup). Bring marinade to a boil. Marinade boiled - drain water from the cans. On top of the tomatoes we put 1 tbsp with the top of the grated garlic and pour boiling marinade. Vinegar can pour (1 t.lozhku), but you can not pour. We roll, we cover with a blanket for the night.
5. Cherry tasty
Wash tomatoes, sterilize jars, boil lids for 5-10 minutes. At the bottom of the jar (1 liter) put bay leaves - 3-5pcs, black peppercorns 5-6 pcs., 5-6 pcs., Garlic (1 tooth, cut into 4 pieces). 6. Mother's tomatoes
In a clean and dry 3-liter jar to put red tomatoes (chop each fork) and 1 bell pepper, cut into 4-6 slices. Pour boiling water, allow to cool for 15-20 minutes. Then pour the water into the pan, add to it (based on a 3-liter jar):
- 150g. sugar (5 tablespoons)
- 60g. salt (2 tbsp)
- 2 tablespoons of 9% vinegar. Bring the solution to a boil, pour into the jars to the top and roll up without sterilizing. Cover with a warm blanket until cool.
7. Tomatoes without vinegar
Ingredients: (per 3 liter jar)
- 5 tbsp. l sugar with a slide,
- 2 tbsp. l salt without slides,
- 1 teaspoon of citric acid,
- peas,
- carnation
- Cinnamon slices.
Cooking:
Pour boiling water, let cool, drain water. In a jar, add salt, sugar and citric acid. Pour over boiling water and roll up. Tomatoes turn out to be sloppy and not sharp at all. The acid is not even felt. Very good for those who can not vinegar. Very unexpected - add cinnamon.
8. Tomatoes-ephemeral "Dream"
They are done quickly, simply, and the result is amazing. Tomatoes are blanched, peeled and placed in a pan, then a layer of chopped dill is sprinkled on them and garlic is squeezed out. All this is filled with warm (slightly warmer than room temperature) salt water.
Proportions - 1 kg tomato,
- 1 bunch of dill,
- 7-8 cloves of garlic,
- 1 liter of water,
- 1 tablespoon with a small pile of salt. Tomatoes are ready in one day.
9. Tomatoes in Georgian
At the bottom of the three-liter jar we put carrot sliced into rings, 2 pods of bell pepper, 3 small cloves of garlic, dill, parsley. We put tomatoes in.
