Yes, and fresh vegetables in the winter for salads was not found. Now times are very different and I prefer fresh tomatoes in winter. But I am not going to give up marinated. Moreover, the process of conservation for me has become some kind of magical ritual. This is really feminine witchcraft - spreading jars of spices, fragrant tomatoes, conjuring over the marinade. And all in order to open a jar in winter and enjoy this yummy.

Grandma's recipe I counted based on liter jar and marina tomatoes exclusively on it. You can use fresh herbs - cilantro, parsley, dill, basil to taste. And you can and slightly dried bouquet for cucumbers. Also very good at it.
In addition, be sure to add spices to each jar, garlic. You can add 1/4 hot pepper. Get "strong" tomatoes.
So, I give an approximate calculation for a liter jar. And the marinade, which I point out, is enough for about 2 liter cans of tomato. So canning is quite convenient.

Cooking clean 3-liter jars and washed products

Fill the banks with tomatoes. Put the water on the fire and bring to a boil.
Fill the tomatoes with boiling water. It is desirable to have a measuring scoop so that you can know for the future how much water is spent on one can. I went to the bank 1.5-1.6 liters. water.
We wait until the banks cool and drain water. You can back into the pot or pour and collect new water. Boil again. Repeat the procedure again. It turns out that we just twice fill the cans with tomatoes with boiling water (cool and drain).

Products:
- red tomatoes - 2-3 kg;

- onion - 100-150 g;
- vegetable oil - 3 tbsp. spoons.
- For the marinade (3 liters of water): salt - 3 tbsp. spoons;
- sugar - 7 tbsp. spoons;
- 2-3 bay leaves;
- vinegar 9% - 1 cup;
- black pepper - 5-6 pcs .;
- or allspice - 5-6 pcs.

On one can of three liters you take:
- sweet pepper - 1 piece;

- 150g. sugar (5 tablespoons)
- 60g. salt (2 tbsp)
- 2 tablespoons of 9% vinegar. Bring the solution to a boil, pour into the jars to the top and roll up without sterilizing. Cover with a warm blanket until cool.
7. Tomatoes without vinegar
Ingredients: (per 3 liter jar)
- 5 tbsp. l sugar with a slide,
- 2 tbsp. l salt without slides,
- 1 teaspoon of citric acid,
- peas,
- carnation
- Cinnamon slices.
Cooking:
Pour boiling water, let cool, drain water. In a jar, add salt, sugar and citric acid. Pour over boiling water and roll up. Tomatoes turn out to be sloppy and not sharp at all. The acid is not even felt. Very good for those who can not vinegar. Very unexpected - add cinnamon.
8. Tomatoes-ephemeral "Dream"
They are done quickly, simply, and the result is amazing. Tomatoes are blanched, peeled and placed in a pan, then a layer of chopped dill is sprinkled on them and garlic is squeezed out. All this is filled with warm (slightly warmer than room temperature) salt water.
Proportions - 1 kg tomato,
- 1 bunch of dill,
- 7-8 cloves of garlic,
