The right combination of food
Digestion is subject to the laws of physiology and biochemistry. We receive health, strength and benefits not from what we eat, but from what we digest and assimilate. Different foods for their assimilation require appropriate adaptive reactions from the digestive organs. A carbohydrate food gets digestive juice, rich in enzymes (enzymes) that break down carbohydrates; protein food gets juice rich in enzymes that break down protein, etc.
The specificity of the digestive juices allocated to each individual type of food is so different in nature that the ak-demik IP Pavlov called them “milk juice”, “bread juice”, “meat juice”, etc. Herbert M. Shelton formulated the rules of compatibility or incompatibility of food products, which are as follows.
Sour food - starches
Never eat carbohydrate and sour food at the same time. Do not eat one meal of bread, potatoes, peas, beans, bananas, dates and other carbohydrate foods with lemon, orange, grapefruit, pineapple and other sour fruits, as well as tomatoes. .
Enzyme (enzyme) ptyalin, splitting carbohydrates, acts only in an alkaline environment. Even a weak acid, it collapses. Fruit acid not only interferes with the absorption of carbohydrates, but also contributes to their fermentation (fermentation). For example, oxalic acid, even diluted in a proportion of 1: 10,000, completely restrains the effect of ptyalin. Or enough acetic acidContained in one or two teaspoons of vinegar to completely stop salivary digestion.
Tomatoes should not be combined with any starchy food. Combination of lemon, apple and oxalic acid in lots of tomatoes is highly contraindicated for alkaline absorption of starches in the mouth and stomach. Tomatoes can be eaten with leafy vegetables and fats.
It is important to learn that the first stage of exposure to starches (coal-water) occurs - in the mouth. Further splitting of this food will occur under the influence of pancreatic juice.
Acid - Protein
Do not eat sour fruits with proteins. Oranges, lemons, pom-dory and similar acids should not be eaten with meat, fish, eggs, cheese, nuts. Acidic fruits, inhibiting the secretion of gastric juice (the continuous release of which strongly requires protein food), strongly delay the absorption of proteins, which leads to their decomposition.
According to Shelton, the so-called health specialists and nutritionists, who ignore this fact and continue to recommend sour fruit drinks while eating, are not worthy of the trust that those who seek their advice have. Lemon juice, vinegar, pickles, etc., when mixed with food, delay the release of hydrochloric acid in the stomach.
Proteins - starches (carbohydrates)
Never eat concentrated protein and concentrated carbohydrate in one meal. This means that you should not eat nuts, meat, sausages, fish, eggs, cheese and other protein foods with bread, cereal, pasta, potatoes, pirozhnymi, sweet fruits, sweet tea, canned fruit juices, etc. The absorption of carbohydrates (starches and Sakha-grove) and proteins is so different that, being mixed in the stomach, they interfere with the absorption of each other.
Lovers of sweets should be aware that sweets, sugar, pies and any other sweet concentrates withstand the secretion of gastric juice and significantly restrain the process of food-cooking . And with a large one-time consumption of candy directly suppress the adequate activity of the stomach. Carbohydrates (sugar) with protein do not get along. Shelton spoke very harshly about the incompatibility of protein and carbohydrate foods, in particular, he said: “Earl Sandwich has the honor of inventing a sandwich — a modern dietary abomination. Hamburger, sandwiches with egg, cheese, ham and similar combinations of protein is the same abomination. The absorption of carbohydrates (starches and sugars) and proteins is so different that, being mixed in the stomach, they interfere with the absorption of each other. "
Protein - protein
Never eat two-fold protein in one meal. . Do not take in one meal nuts and meat, or eggs and meat, or cheese and meat, or cheese and eggs, etc. Milk, if it is consumed at all, it is best to drink separately. The rule should be: one protein food at a time. For the assimilation of a protein product, various conditions in the stomach are necessary, qualitatively and quantitatively. For example, eggs require a different time for juice extraction than meat or milk. From this we can conclude that steak with egg is not the best version of the dish. It would be more expedient - today steak, and tomorrow - scrambled eggs.
Protein - Fat
Do not eat fats with proteins. That is, do not eat cow butter (butter and melted butter), vegetable oil with meat, eggs, cheese, nuts and other proteins. Fat inhibits the secretion of appropriate gastric juices for meat, eggs, cheese, nuts and other proteins. The presence of fat in the stomach reduces the production of digestive juices. The combination of "fats - starches" is more favorable, but not only for the stomach, but also for the intestines.
Sugar - starch
Do not eat starch and sugar in one meal. Jellies, jams, fruit butter, sugar, honey, syrups, treacle, etc. on bread or in one reception with cereals, pasta, potatoes, etc. d. cause fermentation. One of the experts on this problem, M. Austin writes: “Products assimilated by themselves or in certain combinations are often incompatible in other combinations. For example, bread and butter, consumed together, do not cause trouble, but if sugar, jam, marmalade are added to them, they can cause frustration. For since sugar will be assimilated first, the conversion of starch into sugar will be delayed.
Mixtures of starch and sugar cause fermentation with concomitant adverse effects. "
Sweet fruits with starches cause the same fermentation and produce the same decay products as sugar, jellies, syrups.
Many mothers and grandmothers add sugar to cereals for children, which leads to a complete indigestion.
What is a violation of digestion? Shelton explains it as follows. When the sugar added to the porridge enters the mouth, it quickly fills with saliva, in which, however, there is no ptyalin, because there is no ptyalin for the presence of sugar. At the same time, ptyalin is needed for the absorption of carbohydrate foods (in this case, cereals). But since sugar has a more concentrated effect than carbohydrates contained in cereal, Pty-Alin does not enter the oral cavity, and the entire portion of cereal is consumed with non-processed pualalin. In the stomach, as is known, carbohydrate food (porridge) cannot be completely absorbed if it is not processed with ptyalin.
A mixture of so-called baby food, consisting of milk, sugar, flour or cereals, is especially non-physiological.
Melon and watermelon
Do not eat watermelons or melons with any other food.
Watermelon and melon should always be eaten separately. Mr. Shelton admits that he cannot give an exact physiological substantiation of this rule, but it is known that these products decompose very quickly in the stomach and almost certainly cause frustration if consumed together with other products. Said more applies to melon. When consumed separately, the melon passes quickly through the stomach and therefore is a well digestible and healthy food. Melon and watermelon are taken no earlier than two hours after meals. After taking a melon or watermelon, the break until the next meal should also be at least two hours.
Milk
Milk is better to take alone or not to use at all.
The question of milk - about its harm or benefit - has stood at all times and is still being discussed. But it should be remembered that cow's milk is intended primarily for feeding the calf, and even then for the first time after birth, and then becomes unsuitable for him. In childhood, its use in food is still justified, and long-lasting, exclusive or beneficial nutrition with milk is harmful to an adult organism. It contributes to the secretion of mucus, especially strongly this "sin" boiled milk. For those who can not refuse the use of this product, you can make the following recommendations:
- milk should be consumed separately from any other food, and not as an addition to it. It is combined only with sweet fruits, berries and starchy vegetables. Milk can be diluted with non-acidic fruit juices and carrot juice;
- after sour fruits and tomatoes milk can be consumed not earlier than in half an hour;
- it is undesirable to use milk after eating - it blocks the normal secretion of gastric juice;
- drink milk in small sips, delaying it longer in the mouth;
- since milk is a favorable environment for bacteria, after drinking milk it is better to eat a small piece of sweet fruit and rinse the mouth thoroughly.
For the first time, the idea of the compatibility and incompatibility of food came up with Herbert Sheldon. Long-term research has helped him identify the enzymes that are necessary for the digestion of certain foods and develop such a popular diet as a separate diet. A table that clearly demonstrates all the principles of the system is an easy way to stick to this power system.
The basis on which is built separate food - the table of compatibility of products.
Features of the power supply system
The undoubted advantage is that this system can be used for a long time. If you do not want to starve, skip meals and eat monotonous food, choose a separate diet. The table below shows how varied your diet will be.
The principles of separate feeding, in addition to the compatibility table, include:
- lack of overeating and late dinners (after 8 pm);
- chewing each piece of food slowly and thoroughly;
- drinking 1.5 liters of water per day;
- avoiding alcohol (only 1 glass of dry white wine is allowed for dinner);
- mandatory intake of vitamins during the period of active weight loss;
- gradual reduction in salt intake;
- inclusion of physical activity in your day schedule (especially recommended long walks, swimming and cycling).
Despite numerous criticisms, all nutritionists recognize the benefits of separate diets. Compatibility tables help to normalize the diet and make it more balanced. Moreover, such a regime helps a person to follow a diet from a psychological point of view. The presence of rules, but at the same time, the availability of independently form the menu is a great opportunity to learn skills healthy eating and lose weight.
Reception of vitamins is a necessary component of success in losing weight.
Compatibility table
So you chose separate meals. The product compatibility table is as follows. Products in opposite graphs have perfect compatibility. They can be safely used together. Other combinations are contraindicated, as they cause discomfort in the digestive tract and are poorly digested, causing the deposition of excess fat.
Separate food - table of compatibility of products |
|
Dietary varieties of meat, poultry and fish, offal | Any green and non-starchy vegetables (best combined with lettuce) |
Dairy products and cottage cheese | Any vegetables except potatoes, dried fruits and sweet fruits, nuts, sour cream, salty cheeses |
Milk | Not compatible with any other products and should be used separately. |
Sour cream | Grain products, potatoes, sour fruits and tomatoes, any vegetables, cottage cheese and dairy products |
Various types of cheeses (feta cheese) | Cottage cheese and dairy products, any vegetables (except potatoes), sour fruits and tomatoes |
Butter | Bread and cereals, sour fruits and tomatoes, any vegetables (potatoes are also allowed), cottage cheese and dairy products |

Sample menu for one day
What should the menu look like when separate feeding? The Product Compatibility Chart will help you create a wide variety of rations based on this example.
- Breakfast: orange; buckwheatcooked in water; coffee without milk and sugar or green tea.
- Snack: 2 apples or a bunch of grapes.
- Lunch: lean fish stew; a large portion of salad.
- Snack: natural yogurt; a handful of dried fruits and nuts.
- Dinner: vegetable soup with potatoes; a piece of whole grain bread; a glass of natural juice.
Thus, if you want to quickly and safely for the body, separate food will be an excellent choice. The compatibility table will help you master its principles and easily create tasty, varied and healthy rations.
In order to understand which products are incompatible and which are compatible, there is a gradation of proteins, starchy vegetables, legumes, fats, sour vegetables, carbohydrates, green and non-starchy vegetables, berries and fruits (sweet and savory).
For more information about which products you refer to, you can learn from my article “”, everything is described in detail, why and which products are not compatible with each other, I recommend reading.
I will place the table of incompatible foodstuffs here, study and download it to my computer. Conveniently, when it hangs in front of your eyes, right? And do not forget to look into it when you write a shopping list before going to the store. You do make a shopping list before you go to the store?
To be sure:
- For leguminous products include beans, lentils, beans, peas, soybeans.
- For sour fruits: lemon, grapefruit, oranges, pineapple, tangerines, pomegranate, cranberries, grapes and apples, sour to taste.
- Sweet fruits include: figs, dates, bananas, persimmons, raisins and other dried fruits.
- All other fruits and berries are half-acid, and only you can decide for your taste which category they belong to.
- By non-starchy vegetables include: herbs (parsley, dill, tops beet, turnip and radish, celery, lettuce, spinach, dandelion, sour sorrel), white cabbage, Brussels, of red, Beijing, Savoy, cauliflower, broccoli, onions and chives, leek and chives, mustard, radishes, cucumbers, green pea, turnips, yellow pumpkin oblong, Bulgarian bell pepper, asparagus, garlic, chicory, eggplants, sprouted wheat, soybeans, artichokes, zucchini, bamboo shoots.
- Starchy vegetables: corn and potatoes, beets and carrots, Jerusalem artichoke and horseradish, celery root and parsley roots, pumpkin and cauliflower, radish and squash, rutabaga and soybean, zucchini and eggplants, as well as dried peas, lentils, beans, chickpeas.
By the way, did you know that potatoes are not a vegetable? However, both tomato and cucumber ... And tea, on the contrary, was a vegetable, did you know? ..
In addition to the table, pay attention to products absolutely incompatible with anything: melon and watermelon. If you have eaten and “eaten” with watermelon or melon, you can be sure that all the food will “stick” in the stomach and begin to decompose and ferment, leading to gas formation.
Separate food according to Shelton does not proclaim any products useful, and some harmful, their use or harm to health is given by their combination.
Some interesting facts:
- In plant foods, vitamin B12 and vitamin D, some essential amino acids (threonine, lysine) are practically not observed, which makes vegetable protein less full-fledged than animal. In addition, fiber, which contain herbal products (seeds, nuts), reduces the absorption of not only proteins, but also carbohydrates and fats.
- Low-fat fish containing a large amount of water (for example, cod) should be used fried, and one that contains a lot of fat is dense and almost without water (mullet, for example) - cook for no more than 20 minutes. and not under the hood.
- The skin of the fish is not worth eating, even if it is soft, because in the stomach it is digested badly. And it is better to keep in the refrigerator already cooked fish than fresh, and then only 2 days.
- Eggs are useful to eat in the fall and spring, as they contain more than four times more vitamin A in these seasons than in those that the chicken laid in winter.
- Nuts are richer than 5 times of eggs in terms of nutrients, they contain more amino acids than meat, and they also outperform butter in terms of fat content. To better absorb the nuts, chop them in water.
- By the way, peanuts are not a nut at all, did they know?
- About the fact that different types of protein products are incompatible, I think you know. Alcohol completely stops the digestion of protein foods, also already know.
- Food allergies are the body's reaction to poisoning by rotting protein products. If you start eating compatible foods, there will be no trace of allergies.
- Sour belching appears when you try to combine incompatible products: sweet rolls, cereal with sugar, jam pies ...
I scared you enough. Let's talk about products that can and should be combined. If you look at the table and start combining products exactly as it says, your body and your digestion will breathe a sigh of relief:
Some more tips:
- Cook porridge on the water, and do not add sugar, if you like sweet porridge, it is better to add honey.
- Roll and jam - incompatible products.
- Fruit salads are incompatible with nuts, dates and bananas.
- Cheese, bread and butter - such a combination is not combined, although bread and butter are combined remarkably. Do not eat bread with tomatoes.
- Do you like peanuts with beer? Forget it! Alcohol most of the vitamins that contain peanuts (D, E, group B, PP) and minerals (calcium, iron, sodium, phosphorus, manganese, potassium) destroys.
- Kiwi contains an enzyme that breaks down milk protein, so you should not combine kiwi with yogurt or milk.
Above, I wrote about the fact that fats interfere with the assimilation of protein foods, therefore, if you are still going to eat fatty fish or meat, eat a dish with a good portion of green vegetables.
The principles of separate nutrition are actively promoted - every year fans of this food system are becoming more and more. Compatibility of products with separate feeding is described in special tables, we will acquaint you with the basic principles.
The basic principles of nutrition
As a result of combining incompatible products, the work of the gastrointestinal tract is disturbed, the absorption of beneficial elements from food worsens, putrefactive processes are triggered, and the body is poisoned by decomposition products. The optimal combination of products with separate feeding is as follows: fats are compatible with almost everything, but the combination in one meal of proteins and carbohydrates is contraindicated (for the digestion of the first in the stomach an acidic environment is created, and for the absorption of the second, alkaline is necessary) Since carbohydrates, fats and proteins are often present in one product, nutritionists have identified 18 food groups (below we will look at their compatibility).
Product Compatibility List
Between meals it is recommended to withstand a break of 2 hours (only after the fruit, the gap can be reduced to 20 minutes). Compatibility of products in compliance with separate power supply can be checked according to the tables. In general terms, the situation is as follows:
Fish and meat go well with green vegetables and herbs, a little worse - with starchy vegetables and roots.
Eggs are compatible with greens, non-starchy and green vegetables. Worse, they are combined with starchy vegetables and sour cream.
Butter and cream are ideally combined with cereals, potatoes, vegetables, greens, roots, sour berries and fruit. Somewhat worse, these products are absorbed with sour cream, cheese, legumes, milk, cheese, semi-sweet berries and fruits.
Milk is relatively normal with butter, cream, starchy vegetables, roots, semi-sweet berries and fruits, dried fruits (there is no perfect compatibility with any product).
Fermented milk products are compatible with sour cream, starchy vegetables, cheese, cheese, roots, non-starchy and green vegetables, greens, sweet and semi-sweet berries and fruits, dried fruits, nuts and seeds. Worse they are combined with tomatoes, sour varieties of berries and fruits.
Vegetable oils can be combined with legumes, grains and cereals, as well as potatoes, various vegetables, roots, sour berries and fruits, nuts and seeds. Somewhat worse, they are combined with semi-sweet and sweet fruits, dried fruits, sour cream.
Leguminous crops are optimally combined with sour cream, vegetable oil, various vegetables and roots. They are less well combined with butter, cream, grains, cereals, potatoes, nuts and seeds.
Starchy foods (cereals, cereals, potatoes) are compatible with butter, cream, sour cream, vegetable oils, various vegetables (with the exception of starchy varieties), greens. Worse, they are combined with cheese, cheese, leguminous crops, nuts, seeds, starchy vegetables, roots.
Semisweet berries and fruits are compatible with sour cream and fermented milk products, as well as with non-starchy and green vegetables, greens, tomatoes, sour and sweet fruits, dried fruits, nuts, seeds. They have medium compatibility with butter, cream, milk, cheese, vegetable oils, cheese, starchy vegetables, roots.
Incompatibility of food in accordance with the traditional dietology of Chinese medicine
This time I decided to act outside the box, experiment a little. What is the experiment? Writing articles consists of two parts. The main material and explanations to it. Most of the time when writing articles is spent on explanations. This time I decided to do otherwise. I decided to post the main material so that you could already read it, think it over, and I will post the explanations to it (a lot of clear and important text) later, about which everyone will receive a notification in the mail.
Stay tuned!
Below I present to your attention the tablet of incompatibility of products from the point of view of traditional Chinese medicine (TCM) and ayurveda for daily and seasonal food.
I suggest asking questions on the tablet after the material is laid out completely, since I plan to answer most possible questions in the explanatory text.

Comments to footnotes:
1. This refers to "tamed" mercury used in the preparations of Ayurvedic and Chinese medicine.
2. There are classic recipes longevity, which includes lamb, rice, pumpkin and dates. Meals for these recipes can be eaten no more than once a year, at a certain time and season. That is, as a medicine.
3. Eggplant is translated from Arabic as a poisonous cucumber. Therefore, it is necessary during the preparation to remove atropine-like substances that give it bitterness. Soak it in with salt and cut the skin off with a knife.
4. Eggs are good to eat with cereals and vegetables.
5. Especially for people with anemia, general physical weakness, you should not mix different tonic compounds with each other. For example, with lemongrass, mate, ginseng. You can with jasmine, lemon, sugar, honey.
6. Solanaceae is primarily tomatoes, eggplants, potatoes, sweet peppers.
7. Seafood is not compatible with each other, that is, you should not combine shrimp with crabs, mussels or fish in one dish.
8. Yeast bread, chocolate, mayonnaise, vinegar, pastries or over-sweet foods are missing in the table, but not healthy foods. This will be a separate article.
9. Vinegar, sugar, turmeric, mustard are absent in the table, as they are spices, not products.
It is important to understand what one product is incompatible with another. This does not mean that a dish made from them will not be tasty. This means that eating such combinations of foods will lead to acute or chronic diseases of the body. All this will be explained in more detail in the explanations.
It is also important to remember that many products that are incompatible with normal, daily or seasonal food are compatible and even often used as medicines. But it can only be suggested and prescribed for you by a doctor or a specialist in traditional Chinese dietetics.
Be healthy!

PS By the end of the article for your inspiration I will add a small excerpt about incompatible types of food from the ancient treatise of Tibetan medicine Zhud-Shi:
Chapter 17. Food prohibitions.
Then Rishi Vidyagnyana said such words! O great rishi, listen! ...
If you take incompatible types of food, it is the same as compounded poison.
- The unripe sho and fresh wine are incompatible with each other;
- A bad fish to milk;
- Incompatible milk and fruit from the trees;
- Eggs and fish do not fit together;
- Pea soup with cane sugar and the gift are harmful;
- It is impossible to fry mushrooms in mustard oil;
- Do not mix chicken with sour milk;
- Equal parts of honey and vegetable oil are incompatible;
- It is impossible to keep fresh oil in bronze ware more than ten days;
- It is impossible to fry meat haritra on a barberry flame. (Haritra - an animal that is identified by Tibetan authors in different ways: a green bird, parrots, partridge, hare, lion.);
- You can not eat mushroom soup after taking spar;
- It is impossible to drink cold water after ghee;
- You can not eat the meat whitened with the smell of sour dough, as well as boiled meat, which has long been kept closed;
- You can not eat sour, squeezed milk;
- You cannot eat new food until the old one has digested itself, for they may be incompatible and start a quarrel;
- Unusual and not by the time eaten food is also poison.
It is necessary to move from compatible food to incompatible food or vice versa gradually, gradually, until the body gets used to it. And if you do it sharply, then vices will arise.
